Forgive my ignorance (only got my thermomix a couple of days ago) but when the recipe calls for 'saute at 100 degrees' do i press the 100 degrees button, then turn the dial to ^^ ? I am getting confused between ^^ and :-: Thanks!

Saute usually push the timer button (- / +) to set the amount of time, then the 100oC button and then turn the knob to ^^ or 1 or sometimes 2.
The recipes usually say on here. If converting then check the cookbook for similar recipes for a guide.
:-: is reverse - good for keeping pieces of meat/veg/fruit together and not mashing them up.
Time - Temperature and Speed are all needed to cook - we often (at least some) forget to set the time and it doesn't work then :(

And sometimes forget to set the temperature and wonder why it hasn't cooked after 15 minutes or so :-))

thanks for everyone's help. good tips about the temperature/cook functions too! glad i read about it before panicking :)
