Your baking looks good Cookie. I like Bec's recipes.  The recent sourdough scrolls I made was one of hers.  :D

I have to admit I haven't made butter for years simply because it didn't impress me enough to keep doing it.  I feel it does need a bit of salt added or there's just no flavour for me, I couldn't seem to get the ratio right though.  :-))

Our daughter has gone back home after spending a couple of days with us.  She is working all over Christmas so we caught up in the lead up.  It was her birthday on Monday and our Anniv this coming Monday,  so her, DH and I went out for lunch on Thursday in celebration which was lovely.  She even managed to catch up with her friends for breakfast at the Wetlands yesterday before heading back home.

Our son and his girlfriend are coming down from Adelaide a couple of days after Christmas to stay for a few days so we have that to look forward to too.

DH and I will be having a quiet Christmas Day, thankfully he is off this year.  :D

Chookie, so sorry to hear of Ral's accident.  Not nice at any time but in the days leading up to Christmas would be extra hard.  You'd just had a great few days away and sounded so happy.  I hope he improves quickly and gets back home to your wonderful cooking.

They are dolphins Chookie, we have quite a few that live in our waters and visit every day.  :)

It still looks really good Cookie.  My mum used to make the best shortcrust pastry using lard too, loved her apple pies.

I made Walnut Brittle from the US cookidoo which uses the Sugar Stages mode to cook the caramel.  I chopped my walnuts 2 secs by mistake instead of 1 so they are smaller than the photo on their site, I also toasted them before hand. 

The brittle is delicious, so crispy if that's the right description, it snaps as you bite it without fearing you will break a tooth  ;D
Because it cooks it properly in the bowl you don't need to bake it in the oven, takes all the guess work out of it just pour it over the nuts and leave to cool and it breaks with your fingers.

DH is going to be rapt when he gets up soon in readiness of nightshift, will pack some in his lunchbox. I will make some for little gifts for Christmas, a nice change from the normal peanut or almond.  :D

I had trouble uploading these 2 photos, something about security?  I had to delete my post and try again which worked.  Please let me know if they are acting strange when you view them please and I will remove them.  Not sure what the problem was/is but I'm hoping it doesn't give anyone's viewing a problem.  xx

I was quite taken with it Cookie, thought it had a lot of flavour.  So many cheddar cheeses are quite bland.

Sounds like you've had a good time Chookie it's great to have a few days away.

Just a couple of photos of my area.  The new jetty which is part of my morning walk.  You can see how big it is if you notice people spread out around the circle and a drone photo of our friendly dolphins.  :D

I've never had to replace the blades on the 31 either but I did use 2 bowls so I guess that would have lessened any impact.  My other 2 machines are bombing along so far.  :D

Yesterday I made 'sour cream & chicken enchilades' from the AU cookidoo.  It has high ratings so thought I'd give it a go.  Makes a lot as you use 10 tortillas.  Was good to use up some chicken tenders and a breast from the freezer to make up the amount needed.

It looked really good and I cut a corner off to try it and thought it was really tasty, surprised really.  DH loved it.  I've divided it up now into 2 tortilla serves.  Will make again.

I served with RTE's pasta salad that I've made numerous times.  It's very much like what you buy in supermarkets in the ready to go section. The recipe makes heaps and I freeze in 2 serving size.  Used normal macaroni this time as I'd run out of elbow.

Just a note, I discovered a really tasty cheese that caught my eye and was my first time trying.  I used it in the enchilada meal. It's Coles home brand 'Red Leicester'.
