Received a surprise parcel form my Mum yesterday.  When I was about 15 I bought lots of material from Laura Ashley to make a quilt and hand sewed lots of hexagons together. The project got put to one side and never finished.  Mum has got it down from the attic and finished it off and it has made a lovely quilt. Im very lucky!  :)

Spinach and ricotta cannelloni and with the extra ricotta i had left over I made a lemon and ricotta cake which I have posted.

Cakes / Lemon Almond and Ricotta Cake

90g melted butter
250g fresh ricotta
2 eggs room temp
160g raw sugar
zest and juice 3 lemons
1 1/2 cup self raising flour
60g almond meal (either pre made or grind your own prior to starting)

Method
Grease 22cm springform pan with some of the melted butter, preheat oven to 180 degrees
Place raw sugar and lemon rind in TMX and blitz 5 seconds SP 7
Add to bowl, eggs and ricotta cheese, mix 15 seconds speed 5, scrape bowl if necessary, add butter and lemon juice and mix 5 seconds SP 4.  Add flour and almond meal and mix 15 seconds SP 4-5 scraping down bowl as needed.
Scrape into tin and bake 35 mins until skewer comes out clean.

This was very moist and lemony without any icing, would also be nice with lemon icing or hot lemon syrup poured over.

Great idea. I buy the "normal" rolled oats then blitz  a few times in TMX to make them into quick cook, as usually the normal oats are a lot cheaper.

Myer have the animal dyson on special and its free delivery  if you order online its down to $750.  I want one badly!!! but we have two Henry's and ducted vacum so ant really justify ATM, I might have to see to it that Henry falls down the stairs!!!

I agree with all the gourmet tea lovers, T2 is my fav shop. I bought a can of Buddhas Pearls and just love them, expensive to buy but you only use three pearls per infuser and then reuse them about 3-4 times. so refreshing and no need for any milk or sugar as it is such a simple and clean taste.

I drove to Perth last night for a 9 am doctors appt this morning. I was having breakfast at a cafe just down from the surgery about 8:30 when she called me to cancel our appointment.  :( I know that she can't help  getting sick but I wish I had found out before driving 200km.
Den that must have been frustrating.  I got a phone call at 7:30 this morning to "remind" me I had a doctors appointment at 10:30 i felt like saying "helooo I know I have a doctors appointment, i booked it yesterday and I am currently sleeping because I am sick!!!!"  but they never let you know if the doctor, dentist etc is not there.  I hope you enjoyed your breakfast!
