Apple Walnut Loaf

Apple Walnut Loaf
Ingredients
125g butter
220g caster sugar ( I reduced this to 150g)
2 eggs
3 medium red apples, peeled and cut into pieces
175g walnuts
35g SR flour
110g plain flour
1 teaspoon cinnamon
1/4 nutmeg
Preparation
Preheat oven to 160 degrees.
Prepare a loaf tin, approx. 9cm x 23cm.
Place butter and caster sugar into bowl. Beat 3minutes, speed 3, scraping down frequently.
Add eggs one at a time and beat speed 4, 10 seconds.
Add in walnuts and apple pieces.  Speed 3, 5-10 seconds, until combined.
Add flours, spices and a pinch of salt.  :: for about 1 minute. Then combine yourself using a spatula.
Place into the prepared tin and bake for about 1 hour. Leave 10 minutes before turning out.

This recipe is from Julie Goodwin in the Women's Weekly. I have altered it to suit a thermomix and made a couple of small changes.

We loved it. It needs to be kept in the fridge here in Australia as I think the moistness would cause it to go mildew otherwise.
May all dairy items in your fridge be of questionable vintage.
