Just to bring up the topic of okonomiyaki again.... (because I love it!)

I made these from the "in the mix" recipe last night - and they were fantastic! The sauce is divine, and I'd made some fresh mayo earlier that day, so the entire thing was just delicious.

I made these last night as DD had them in Japan and loved them. We sort of enjoyed them (DH and I) but they were very different to anything we had ever had. I will probably make them again but this time not blitz the cabbage so much and I'll add other vegies eg peas and some pieces of chicken torn up.
It seemed so unusual to have a sauce with them and then mayonnaise but the sauce is very strong so the mayonnaise helped with breaking that up.

They are traditionally served with the sauce poured over and then the mayo kind of squiggled over that. If my picture attachment works, this is a fancy version of that (not my photo!).
You could really add any veggies you want, or chicken. It would be fine.

Thanks. Will try chicken next time. DD said it was nice but not as good as in Japan.

I made these tonight with chicken.  This is definitely a keeper, it was very good.

I love the In the Mix recipe but as yet haven't attempted to make the sauce, I've just used the store bought one. Wondering what sort of mustard to use? Recipe just says 'mustard'.

(makes 1 4 serving pancake)

Ingredients:
1 cup flour (I used whole wheat flour)
3/4 cup dashi (or water)
1 egg
1/4 of a cabbage, about 2-3 cups packed (shredded)
1 carrot, about 1/2 cup (grated)
1 small zucchini, about 1 cup (grated)
1 green onion (chopped)
3 slices bacon
okonomiyaki sauce (or Worcestershire sauce)
mayonnaise
green onion (chopped)

Directions:
1. Mix the flour, dashi, egg, cabbage, carrot and zucchini in a large bowl.
2. Heat some oil in pan.
3. Pour in mixture and top with the bacon slices.
4. Cook on medium heat until golden brown on both sides, about 5-15 minutes per side.
5. Top with okonomiyaki sauce, mayonnaise and green onion and slice.

I realise bacon isn't vego, just leave it out. Apparently the bacon cooks when the pancake gets flipped.

I made the Okonomiyaki from In the Mix tonight and I loved them :D I used wholemeal flour and didn't add the sugar or salt. I served them with beetroot salad and a slice of toast (not very Japanese, I know!)
I'll definitely be making them again :D
