Last night I cooked a very large chicken in the BBQ.  Made my own rub to give it a bit of flavour.  Ground some Kefir ? Lime leaves and  Thyme with salt and pepper.  Rubbed generous amount over chicken.  Took 2 hours to cook and was moist and tasty.  Plenty left for tonight.

I might have the same as I did for lunch today, there’s 1 serve left and 12 uncooked pork & veal meatballs in the freezer for another time.  I served 3 meatballs (cooked 6 in the air fryer) with creamy, garlicky zoodles and poured a little home made passata over them. I’ll check out some different sauces to try for the next 2 batches I cook.  I’m spending most of my evenings looking at Keto websites and printing out recipes, I’ll eventually put together some cookbooks with all my favourite recipes. It’s very time consuming but I’m really enjoying myself.

The best part is that you are enjoying yourself Judy.
I have book club tonight so it will be something fairly quick and easy. Probably fish, chips and salad.
May all dairy items in your fridge be of questionable vintage.

What’s a chip cookie LOL.  If ever I’m going to crave anything it will be a chip but if I do then I’ll make some out of turnips, so many things to try yet.

Looks yum Judy.  I do the same regarding recipes, except all mine are on my laptop.  If I can't copy and paste, I type out the recipe in a word document with any changes I've made, tips etc and add my photo. It makes it much easier the next time I get around to cooking it again.

I'm making a meal for me tonight out of Alyce Alexander's 'Low Carb' book; 'Chicken Puttanesca'.  Am interested to see what the sauce turns out like as will do my High Heat for the onions to start off  ;D 

I've had this ebook for years and I can't remember ever cooking anything out of it, shameful as there looks like some nice ones in it.  Same with her Super Healthy book, have earmarked some of the breakfasts, look right up my alley.  ;D

Glad to see Julie and Judy both enjoying searching for recipes .  I can spend a whole doing that.  Then I turn around and make something up. I suppose I am inspired but want to use what I have .

I'm another one who loves looking at recipes.  I have so many on my computer but usually end up making a favourite recipe.

Judy can you have sweet potato chips? I guess not. How would parsnip ones go?

I spend ages looking at recipe books, both ebooks and real ones. I even have some that I say aren't really for cooking, just reading. eg Adriano Zumbo's books. Each week when I menu plan I have books around me, I spend more time looking at them than menu planning.

Tonight we are having Shepherd's Pie. (not much recipe looking for that one!) I picked up some lovely fresh beans at the Italian grocer and want to use them today.
May all dairy items in your fridge be of questionable vintage.

List of the Best Low Carb Vegetables for your Keto Diet
Spinach.
Broccoli.
Cauliflower.
Zucchini.
Mushrooms.
Celery.
Eggplant.
Squash.

Some ideas for “keto chips” include:
Cheese chips
Radish chips
Cucumber chips
Kale chips

I believe I could have celeriac or turnip ‘chips’, it depends on who is providing the information. These 2 are higher in carbs so if you are having under 20 g carbs per day they would be out of the question.  I guess once you reach your goal and go into maintenance some foods could be added as long as they are relatively low in carbs. Easier to just stick with what I know I can have. I don’t profess to know too much but Mr Google is very helpful, he must get sick of me asking if I can have this or that on Keto LOL.

What a great picture Julie, it’s hard to tell the difference between the real thing and the picture. When I first started doing Keto I had apples, oranges and bananas on hand but none were allowed on Keto.  Very limited in the fruit range.

Judy, local cafe has Zuchinni chips.  Everyone loves them.  I told GD I would try and make some.
Have a feeling that they have a VERY fine batter of some sort. Have a feeling the batter is beaten egg, a little water and a very small amount of soft bread crumbs.
One of my all time favourite dishes is Cauli soup.  Often just very good homemade chicken stock and Cauli. All in TMX.
