Soups / Re: Cream of Pumpkin

Thanks guys.  ;D

The pasta trick is great if you want to keep down your fat content, rather than using cream to thicken.

Soups / Cream of Pumpkin

Cream of Pumpkin

Tonight we've had our first snow falling on Montreal, so I was inspired to cook my favorite fall soup. This is also my first adaptation of a regular recipe to the Thermomix, so I'm quite proud of it even if it's very simple.

I use big chunks of thawed frozen pumpkin. I'm not sure that you can use fresh pumpkin, unless you cook it longer...

1    small onion
30g    butter
800g    pumpkin
400g    water
500g    diced spiced tomatoes
50g    pasta
350g    milk
   Salt and pepper

Cut onion in half and put in bowl with butter. Set 3 min at 80° speed 4.

Then add pumpkin, water, pasta, tomatoes, and cook 25 min at 100º, speed 1.

Blitz for 1 minute, speed 4 to 10. Add milk, salt and pepper.

Serve with chunks of ham and shredded cheddar cheese.

Recipe Requests / Re: Thermomix International and Translation
« on: September 24, 2009, 03:00:22 am »
Melissa, you've done a great job with this thread while this lazy bum was drinking margaritas by the pool all summer long. I promise I'll give it a go to translate a few of your requests, now that the evenings are getting shorter and colder!

I also have a request of my own: would it be possible to have the Zucchini Bread recipe?

Thanks again for your hard work. I know it takes some effort to write up those recipes, but it's great to have everyone's feedback on them.

Soups / Re: Cold Cream of Celery
« on: September 21, 2009, 03:09:01 am »
I was looking for a recipe to pass two heads of celery, and since fall is knocking at the door here, I was hoping for a hot cream of celery, but yours is the only one I found, so I simply served it hot. It was delicious! Hubby who swore he would not eat anything with celery in it, actually liked it. I also skipped the apple though. Baby steps :)

Oh well done MrSpock - I can imagine how pleased your fellow shipmates were. My favourite desserts on board are always souffles as I never do them at home.

Aw, we didn't get no souffles! Why do you not make them at home? Seems like they're one of the hard to make food that has a high success rate using the TMX.

Hubby made Bimby Queen's Chocolate Melting Center Cakes. We had invited over the friends we went on the cruise with, and that cake was their favorite dessert on the boat. I remembered seeing it here, so I kept quiet and surprised them with it. They were teary eyed  :D

My husband made this tonight for company, and it was a success. We circumvented the sticking problem simply by serving the cake in the ramekins  :P We served each in a bigger plate with a smaller ramekin of vanilla ice cream, topped with a sliver of dark chocolate. YUM!

Just dropped by to say hi everyone. I'm just back from a 7 day cruise in the Caribbean, been pampered and fed like a Thanksgiving turkey. I'm now in denial that it's over, and refuse to cook anything, even with the Thermomix. Unfortunately, reality is catching up quick, as I have to be back to work Monday morning. *pouts*

I guess I'll go browse the recipes  ;)

Main Dishes / Re: Pork Filet Mignon with Mustard Sauce
« on: July 25, 2009, 01:55:59 am »
YAY! Hadn't seen the latest reviews. I'm so happy this is such a crowd pleaser!

I finally cooked the dish myself tonight. I was convinced DH would hate it, but he actually liked it! Enough to be added to our regular rotation. This is a huge victory, as he usually likes nothing fancy. I personally loved it.

I held the salt, garlic (seemed tasty enough without) and mushrooms as Hubby hates them and would have refused to eat anything with mushrooms in it.

I tried a glass of Vermouth with my meal... ATCHIWAWA! Felt like my oesophagus caught on fire! I think I'll keep it for cooking  :P

Thanks guys for your suggestions. He does like all the "bad" things in the Thermomix, like pizza and bread dough, carbonara, sorbet, etc, but the goal of buying the Thermomix was to eat better!

My husband did surprise me greatly this week though. He had a lunch with the "big boss" at work, and it was at a fancy restaurant. I told him he probably wouldn't like anything on the menu... Well he came back saying he had fish soup and mustard duck and loved it!! He says he even ate all his veggies, but I find that hard to believe  ;)

So I might try some new recipe as soon as I have a minute. We're planning a vacation to Washington DC and a Caribbean cruise this summer, so that's keeping me quite busy (but in a good way) YAY!  ;D

You're lucky Judy. All I get is "it's ok" when I try something new, which means he doesn't like it. The biggest problem is that he hates most of the ingredients that I love, like mushroom, onions,tomatoes... He doesn't care much for garlic either, although he will tolerate it, thankfully.

And the thing with meat, at least in the summer, is that it's much easier to just slap it on the BBQ. It means he does the cooking most of the time, and less dishes to wash afterwards. So I'm left with plain white rice or Lipton Sidekicks to do in the Thermomix, and that's not very inspiring. Anyways, thanks for listening to my whining  :-*

Just dropping by to say hi, and no I didn't drop off the Innernet. Summer is finally in full swing here, and we're enjoying the few sunny days we have by going outside as much as possible.

I am however facing an existential crisis with my Thermomix, and find myself using it less and less. My problem is that DH doesn't like much of anything that is not junk food or a plain piece of meat.  :( He will not eat anything with spices or herbs, nor most vegetables. So when I make a meal, I can either make something new in my Thermomix, and make him something else, or I can just cook him something he likes and make a quick salad for myself. Most of the time I don't have the energy to make two complete meals (with double the dishes to wash), no matter how easy it is to cook with the TMX. He does love the breads and desserts made in the Thermomix, but I'm overweight enough as it is, so I've slowed down on those too. Oh well. It might be easier when fall comes around, which will be soon enough I'm sure...
