Title: Chicken with Normandy Sauce & a Potato Mash with lemon zest and chives

Name of Recipe: Chicken with Normandy Sauce and potato mash with lemon zest and chives

Number of People: 4

Ingredients:

40-50g butter
4 chicken breast fillet pieces (680g) I used 5 as they were quite small
60g of white cooking wine (dry white)
20g cognac
250g button mushrooms known as champignons de paris over here, sliced
250ml of creme fraiche or sour cream in oz
1 tablespoon of fresh chives
1 tablespoon of flat leaf parsely
250ml of chicken stock (or whatever stock you have)
a tablespoon of cornflour mixed with a little water to make a paste if you find the sauce isnt thick enough for your liking


Preparation:

Put herbs in bowl and chop for a few seconds on speed 4 or turbo about twice (I forgot to do this so just finely chopped them by hand).  Mix into the cream in a seperate bowl and set aside (keep in fridge until needed).

Prepare the chicken breast fillets and place them on the varoma tray lined with a piece of moistened baking paper.  Season each breast with a little salt and pepper and cover with lid ready to cook.

Put the butter and the sliced mushrooms in the bowl (doesnt need to be exact, I actually added more mushrooms) and cook for 5 mins, 100°, speed soft or 1, and on reverse so you dont mush up the mushrooms.

Put the wine, cognac into the bowl with 250ml stock and put the lid and varoma in place and cook on varoma temp, for 12 mins, speed 1, reverse.  Check the chicken after this time also as mine were slightly frozen or very cold at least so may have extended cooking time..but I found the extra time was almost perfect maybe just a minute less.

Remove the varoma temporarily to add the cream and herbs and cook for a further 6-7 mins on varoma, speed 1, reverse always.  Dont forget to reput the varoma and chicken back on top before restarting the cooking time.
Chicken should be cooked but double check its cooked to your liking, I think it could have even gone one minute less (so 6 mins as I did 7) but it was fine.

If not reduced enough or not as thick as you like just add some cornflour mixed with a little water to thicken.  I added a tablespoon with a little water to make a paste then added and mixed it around with a spoon and didnt need to cook any further as it thickened straight away and was just how I like it.

While this is cooking I prepared the mash potato which I did on the stove and usually add cream and a little cubed butter, mash it all up and then added the zest of one lemon and a handful of finely chopped chives (I cut them up with kitchen scissors) and mix it through.  You could do it in the thermomix beforehand but I find its quicker to make it while the thermomix is cooking the chicken...if only I had another thermomix hihi or at least another bowl!

Serve with the mashed potatoes and I cut the chicken breast cut in thick slices crossways layed on the mash and covered in sauce...mmm bon appetit!

The recipe was converted roughly from a recipe from a cookbook I have in french called Vite Fait Vite Pret by Marabout.

Nik2WIN - I cooked this and thought it was absolutely delicious.  DS1 & DS3 loved it (DS3 is not yet 3 yrs old and yet he still helped me make it)  It took me around 40 minutes from start to finish to make so perfect for a midweek meal and yet tasted gourmet enough for a dinner party. DS2 refused to try it - he might change his mind later when he's REALLY hungry. Definitely a make again. Many, many thanks.

CP - it got the 'thumbs up' from everyone. We all thought the sauce was to die for. We obviously don't have small chicken breasts like you can get in France, so I just halved mine to make them thinner as they weighed the same as yours and I could only buy 2 big thick ones. I had heaps of herbs and reserved a tablespoon to put in with the potato mash. We didn't have cognac and a big bottle cost about $60 but apparently brandy is a close match as it is a matter of being 'regional' or something along those lines. This gets the tick from me and thank you so much for posting it.

Hally -Absolutely delicious, a hit with us all. I used 2 chicken breast & halved them. Didn't have cognac so used brandy. Did use creme fraiche. So easy, so quick  5/5 from all of us. I served with steam broccolini & carrots. I cooked the chicken in the final stage for 6 minutes & it was perfect. Thank you Frozzie.

thanks and will be interested on feedback once someone cooks it also...i was on a roll with new recipes but thermie will be out of action for a couple of weeks so new posts will have to wait...snif  :( but at least i will get him back all better even though its nothing major or at least I hope so..!

im trying acw..really I am but at the moment im not even motivated to cook anything (and thats not me) as I really miss my buddy thermie..pretty strange how much effect one little machine can effect our lives...still occupied today as DS is home sick..teacher called this morning to say he had thrown up so fun times ahead..sun is out though on a positive note lol  and I always have  little miss DD to keep me occupied pretty much all the hours she isnt sleeping :)

glad you liked it..at least two of your kids tried it..my kids are very fussy and even when I cook them yummy food, my DS tells me he prefers the food at the canteen (very basic 'hot meal' school food lol) major insult!! or that he doesnt really like it that much (he is very opinionated (i know ive spelt that wrong but you get what im saying)...kids have no idea what good food is!

If its for a dinner party I just 'form' the mash in a ring or whatever gadget you have and slice the chicken or not and place it on one side with sauce...guess presentation would depend on who your guests are lol!

I just noticed this has been moved and even though it could be an all in one meal if with rice or just veg, I dont consider it an all in one as the mash has to be prepared seperately either before in the thermomix or on the stove??

rice maybe and i guess the potato could be cooked differently ie in cubes in the basket..i cook mash in the milk with the butterfly so i guess you would have to steam it in pieces then mash it by hand adding milk or cream and butter etc...everything is possible I just dont consider it an all in one..not my idea of it anyway as I consider an all in one as all in and cook and at the end you have a meal??

I always cook cubes of potato in the steam basket Frozzie so that's what I would do.  Having a second bowl would make it easy to mash it too if you didn't want to do it by hand so yes, I would consider it an all-in-one meal.

I don't know about others but I regard this as an all-in-one.  Often you need to thicken a sauce or mash the potatoes after the cooking time. :)

Its probably just me trying to complicate things lol...then again jd I consider your curry mince beef an all in one and I always cook rice or mash on the side so...just ignore me!!  :P

It was on the list of recommended all in one meals from someone, Frozzie, which is why it was moved.  I'm actually making this for dinner tonight and just spotted as I was reading through it that it wasn't strictly all in one - but thought I'd give it a whirl as an all in one to see how it goes.  I'll let you know.

It looks delicious - whether it's all in one or not!  ;D

no problem caroline..i just didnt consider it an all in one but would be interested to see how it goes as an all in one...i find though that the rice and or potato take alot longer to cook so would be a pain considering you have the sauce in the bottom..but would be good to know how it turned out!

I wouldn't consider it an all in one as you have to cook veggies on the side.  For me an all in one is exactly that and has all the veggies/rice/potatoes etc that you'd need.

But perhaps I'm being too literal  ;D

When I came to do this I discovered that DH had used the last of the mushrooms and the brandy!  oh well.  I have him replacing them for me today  ;D

As soon as I've done it I'll give you feedback as to whether it works as an all-in-one or not.  If not, I'll move it back - but will still be grateful no doubt to whoever recommended it be added to this category as I wouldn't have discovered it otherwise!

Hi Frozzie,
just to let you know that it's cooking at the moment!  I have the vegetables steaming on the top tray above the chicken, but decided that the potatoes wouldn't naturally go in to cook at the same time.  It could be adapted, but why?  It's a wonderful recipe, and doesn't have to be forced to be all-in-one.

I can completely see why it was put forward for this board, but agree with you that it doesn't quite fit here.  I'll move it back to the Main Meal board in a minute.  But I will copy a note to the all-in-one board to let people know about it, because it's still a quick and easy, tasty meal which is almost all in one  ;D

Thanks for sharing - and for bringing to my attention that it isn't a classic all-in-one meal.

haha CP just tell DD she doesnt know what she is talking about, your photo is lovely and WOW that is one huge breast..ours here can fit into the palm of hyour hand to your fingertips comfortably but i think they use alot more hormones in breeding in oz than in europe..

re the cognac...brandy (known as eau de vie in french which is a clear brandy) would have been a pretty close match as cognac is a type of brandy and it actually makes the sauce..has a certain flavour that is typical to a normandy..and yes it is a regional thing and the true type of brandy used in normandy is actually calvados (a local brandy that is a distillation from cider either apple or apple/pear from local regional fruit and comes from the area of Calvados in normandy).  I used cognac as thats what hte recipe called for and calvados is not as easy to come by as we arent so close to normandy where we are.  Cognac however, from the region cognac and is a distillation of white grape varieties local to the region also..there are several different qualities of cognac....coming from france you can buy it in small bottles so i have one i use for cooking..would NOT be paying 60 dollars for a bottle to use in cooking though lol..

Alcohol is alot more expensive in oz...i notice it everytime I go back ...we have wine in our celllar that is worth several thousand dollars in oz...if you notice in oz wine or bottle shops the wine, even the collectable wine and very very expensive bottles are never more than a few years vintage...criminal...they should be alot cheaper but think that is where they make their money..here we buy it cheaper only a few years old and age it (if suitable to be aged) in our cellar and obviously the older it is the more valuable and better it will taste..it really angered me when i saw how ridiculous prices were and not at all worth it.  DH and I had a laugh at how much some of our bottles would be worth in oz!!

Made this last night. Absolutely delicious, a hit with us all.

I used 2 chicken breast & halved them. Didnt have cognac  so used brandy. Did use creme fraiche.

So easy, so quick  5/5 from all of us.

I served with steam brocolini & carrots.

Sorry no photo, it was gone in minutes.

I cooked the chicken in the final stage for 6 minutes & it was perfect.

I saw this on FB the other day and remembered it has been on my to-do list for years!  Tonight I cooked 1 chicken breast for myself but made the full quantity of the mushroom sauce (yes I did have cognac) as I can always use that in other ways.  I kept the chicken dish warm in my baby thermoserver whilst I cooked vegies to accompany it.  It is delicious as others have said, thanks Frozzie.
