We have an informal arrangement with our lovely neighbours. Lots of fresh fruit and veg come over the fence and I send back some of the things I make. Late last week an enormous Qld Blue pumpkin arrived. So I have been making batches of

I liked the risotto but DH wasn't fussed until today when I made all the leftovers into risotto "cakes" by simply rolling them in Kookaburra herb and garlic breadcrumbs and then shallow frying them. The neighbours are getting a second batch of scones but only half a pumpkin fruit cake as the male neighbour doesn't like fruit cake. Men

A whole pumpkin goes a long way doesn’t it? I love your arrangement with your neighbour, a win win situation.
None of my immediate family would eat fruit cake, pity as I used to love it. These days I know very few people who would eat any cake at all, they’re either Diabetic or watching their weight.

I adore fruit cake. I will eat and eat it. I don't make it very often anymore for that reason. Tenina has a Paleo Fruit cake that is very tasty and not too high in sugar or calories.

Yesterday I made some spinach & ricotta parcels with extra veg in them, and some cornflake cookies.
Today I found some pizza dough in the freezer so thawed it out and topped it with a cheese, bacon, onion & mushroom filling then rolled it it up to make scrolls.

So easy to resist cookie but I had the TimTams in the pantry for the tradies I use. I’ve had them all here recently (maintenance jobs in and around the house, some heavy gardening jobs, car service, window cleaning and car washing) and I used what I had left to make half quantity of the recipe. I’m not even going to try one as I know they will just stick to my teeth and stay there.
