Hi wonderful thermomixers,

I'm having a go at a making some bread (usually don't eat it as a family member is gluten free) but thought I would make some bread to go with some dukka I made in Timmy and, well... I like a challenge!

I'm using Cookie's vienna loaf recipe and all was well until I pressed the  ::  button and the symbol didn't come up on the display like the  :-: does. I've never used this function before so I don't know how it should behave. I'm pretty sure it should be doing something...please help. Thanks!!

Special Diets / Banana muffins - GF/DF

Banana Muffins - GF/DF

2 cups of almonds (You can substitute a mix of hazlenuts and/or pecans with half the almonds)
1/2 cup of rice (or more nuts if preferred.)
3 eggs
1 teaspoon vanilla essence
1/2 cup of honey
2 large bananas
pinch of salt
teaspoon cinnamon
teaspoon cardamon
teaspoon of Bi carb of soda (could add a teasppon of baking powder too)
optional - 1/4 cup of sunflower seeds or dairy free choc chips

Preheat oven to 180 degrees (175 fan forced)
Prepare muffin tins.

Grind nuts on Speed 7 for 10 seconds. Set aside.
Grind rice on Speed 9 for 1 minute, add to ground nuts. (Wash bowl - I don't bother!)
Place butterfly in bowl and beat eggs on Speed 4 for 3 minutes.
Remove butterfly.
Add banana chunks, vanilla, honey and mix Speed 4 for 10-15 seconds.
With thermi running on Speed 3, over about two minutes slowly add the dry ingredients (ground nuts, ground rice, salt, cinnamon, cardamon, bicarb.)
Add sunflower seeds or DF choc chips and mix briefly on Speed 1 or 2.
Pour into patty pans and cook in oven for about 18 minutes.

This recipe was given to me recently and I've just tweaked it for the thermi. :)

I've made it several times as it's easy and uses up over ripe bananas. It's great to take to those social occasions which require a plate and it seems to be quite popular even when I don't ice it!

TM Balti Paste and Lamb Curry

Serves 6

1/3 - 1/2 the quantity of TM Balti paste from Fast and Easy Indian Cooking book
1kg lamb pieces
1 cup of yoghurt (I used coconut yoghurt for dairy free)
1/2 tsp salt
water.

In a casserole dish, marinate the lamb with yoghurt and salt for about an hour. Mix the balti paste through the meat and add a little water (and any chopped veggies you feel like adding.) With lid on, cook in the oven for about an hour and half to two hours and stir occasionally and add water if necessary.
Serve with basmati rice and dahl. Yum!

I'm freezing the rest of the TM Balti paste to do this again. This went down well at our house and it's so easy!

My first TM adaption:

Chicken and chickpea patties

1/2kg chicken mince
Tin of chickpeas, drained and rinsed
1 carrot, roughly chopped
1 small onion, quartered
1 garlic clove
1 tsp salt
½ tsp turmeric
½ tsp ground cardamom
1 tsp grated ginger (or ground)
1 tsp chilli powder,
1 tsp cumin
Chopped coriander

On speed 4, chop onion, carrot, ginger and garlic in TM for 3-4 seconds, scrape down and chop again.
Add chickpeas and mix until blended.
Add all other ingredients and blend to a paste – about 20-25 seconds on speed 4 or 5.
Shape into patties and either bake in oven for 25 minutes or pan fry with a little coconut oil.
Makes about 15 patties, depending on size.
Note: they can be a little dry so serve with mango chutney or sweet chilli sauce.
(Great served with high protein salad.)

Introduce Yourself / Hello from another Melbournite

Hello all.
I’ve been lurking on this board for several months now and it’s time I came out! We’re on a Gluten Free/Dairy Free diet here, so getting Timmy and checking out this forum have both made a HUGE difference to our food boredom level! (I can’t tell you how frustrating it has been not to be able to use cheese for a flavour hit – so many recipes use cheese in the non GF/DF recipe books I have!) A current family favourite is TM Impossible Lemon Pie – GF/DF of course. Yum! And we love the EDC Beef Rendang (with a bit of tweaking here and there.)
You’ve all been so generous with your recipes, tips and sense of fun – so a really big Thank You!
