Special Diets / Gluten Free Chocolate & Sweet Potato Pudding

900 g of peeled and diced sweet potato
250 g 70% dark chocolate
125 g butter (probably can be replaced with margarine to make it vegan but i have never tried)
100 g dried fruits(pine apple, papaya, banana, etc...9
3 cloves
pinch of black pepper
pinch of salt
100 ml molasses or syrup
zest of 1 orange

steam the sweet potato untill tender(about 30-40 min depending on size) and let them dry off for 5-10 minutes while
melting butter and chocolate in the tmx
add all the ingredients except the dried fruits
speed 10 untill everything is smooth
add the chopped dried fruits and stir around softly to distribute

pour into a baking dish covered with baking paper and bake for 1 hour at 200 Celsius

let cool off in fridge and eat the next day with whipped cream :)

tastes better the longer you wait(good for 5 days)

Didnt know that dishwashers were that slow  :o. I have never had one and i dont recall ever to have used one  ???

Anyway i always clean up while i cook so when i have had dinner its usually only very little to wash.

Around 50 though i have never really counted. Takes 2 min and 30 seconds each wash.

Desserts / carrot sorbet

800g carrots
1.5 L water
2 gelatin leaves soaked in cold water
200-250g sugar
juice and zest of 1 orange and 1 lime or lemon

I dont really make make this sorbet in the tmx but im sure you can figure out to put the times and speeds on by yourself.

chop carrots in the tmx
add water and boil for about 10-15 minutes
add sugar,lemon+orange zest and juice
add  gelatin
cook for about 2-3 min
blitz for 10 sec
strain through a sieve and let it chill

if you have ice cream machine use that if not freeze it for at least 5-6 hours
and then chop it into large chunks and run it through the tmx at speed 10 and freeze again.

I add grated vegetables to the meat when i cook hamburgers for the kids (carrots, zuchinni, onions)  :-))

Make sure that the coconut is cold then the flesh will release easier. Hit it with the backside of a knife until it cracks.

Bake it 10 minute less and let it chill and freeze. When you need it bake it the last 10 minutes. Just as good as fresh baked.

Not expert but id say that the 2/1 is for layers/fillings and 1:1 i would use for covering the cake.

The alcohol evaporates at all temperatures above freezing point(in an non closed container) but how much depends on the temperature, the surface and how much time.
I posted a link before where you can see the leftovers of alcohol after cooking.

Looking it up i found that after 1½ hours of soft boiling without a lid there will be 20% alcohol left.

Im sure there will be some leftovers of alcohol but probably very little. I know that when you cook Boeuf Bourguignon some alcohol is still left after boiling softly for more then 1½ hour with no lid. Guiness has less alcohol then wine but most likely there will too be a bit of alcohol left. How much depends on cooking time and amount of beer your dish has.

Anyway i would consider it safe for children to eat unless they have an enormous appetite ;D
