i am having problems with the sourdough 2  :(
Uni,  I think it is the weather.  I left mine out over night and it still wasn't very energetic this morning.  the yeast bread did its thing in 30 mins.   it is now 7 1/2 hours and it has risen about 1/2 of what I would expect in 2/3 hours.  i will just leave it out all night and hope it  does not bubble over.
I will remove 1 set of photos.

Making this today with 170 wh ml in the mix as one loaf. Use top oven with main oven on low for first rise.
Run out of fresh yeast, back on dried.

Am laughing at your cool temps experience and bread, we have these temps all the time and much lower, maybe that's why my sourdough has been less successful?

Its very windy here today, not like midsummer at all.

Started researching bread 10 mins ago, to prepare for the kids' lunch boxes tomorrow. Have yet to use my TMX to make bread! Want to give this a go, after seeing all the fab photos of bread :)

I read from page 1-4...but gave up after that, as I've got to prepare lunch now. Somebody mentioned a natural bread improver. Are they easy to get at shops? Ordering online would take time to arrive.

BZB,  if you use a good quality bread flour you don't need improver.   If you want to add some,  a Vitamin C tablet,  crushed will do.

BZB I have taken to copying Chookke. I now use Laucke bread mix. I use this recipe and just put the 300 ml water and yeast into bowl. Give it 2 minutes on 37 degrees. Then add my flour. At the moment I add about 50 g spelt and the rest the bread mix. You don't need to add sugar, salt or bread improver. I make it into a largish loaf and it lasts us for 2-4 days. I slice it when it's cool and freeze it in slices.
I vary the type of flours and add seeds sometimes. Depends what we feel like.
I have one rising now so will post a photo of the completed loaf.
May all dairy items in your fridge be of questionable vintage.

Chookie, Cookie, thanks. Will try it without the improver and see how it compares to the bread maker. Trying to get soft bread and rolls; the bread maker recipes can't seem to do it :(

BZB,  I like to try different bread recipes,  just for fun,  and often do as Cookie does.  With the bread Maker , I make the dough to this recipe in the TMX,  let it rise in the bowl.  Remove the paddle from the bread machine and line the base of the bread machine bowl.  Form the bread into a shape that will fit your Bread Machine bowl,  let rise to about 3/4 ,  cut a cross in the top. (this allows the loaf to rise evenly).  Spray with water and bake for about 1 hour. 
You need a Bread machine that has a bake cycle.
While the bread is rising I heat a wheat bag and place it in the machine to warm it ,  in cold weather.

Sorry BZB I forgot to put the photo up. Here it is.

I use this for our everyday bread. This loaf has about 50-60g spelt added with the white flour.

Our dearest oracle Chookie, thank you, thank you, thank you. I've actually googled for a method to use my breadmaker using own recipe before, and could not find an answer. But now you've provided the solution!

I've got a Panasonic SD-2501.... And it does have a bake only function :) :D

BZB,  the NO Fuss recipe,  is just that.  You can use it as is or fiddle with it and sub different seeds, grains or flour. 
I like to use the bread machine when it is too hot to light the oven.  Mine is a Panasonic, SD 206.  Probably about 20 years old.  I have even worked out how to do SD in it.  This was a challenge.
All us bread makers feed off each other.  Even the smallest tip can be useful.  I have learnt from Cookie,who fiddled with the sour dough process, from Gert who was determined to produce SD in a hot climate,  DD who also determinedly made rye SD bread.  Uni, Hally and Judy all did their own thing.  Then of course there was Isi who really got things moving.  Last week I looked at some beautiful savoury scrolls made by a forum member.  We all look forward to what you will produce.
I think there is a thread for bread made in TMX and baked in a bread machine.

Yes, here's the fruit loaf recipe Chookie just mentioned - prepared in the Thermomix and baked in a bread machine.

Here's the sourdough recipe.
