Until double and then if there is more,  it will 'bounce'  in the oven.

what do you mean by bounce chookie - will they go rubbery??

I'm asking because yesterday things got crazy busy and the first rise was 24 hrs. I could only do a second rise of about 20 mins - they were ok but not as light and fluffy.

Bounce, is the extra rise that you get in the oven.
In a warn room, 30 mins and it should double,  then 20 mins for second rise.
The texture of over risen bread isn't as good.
You need to put 2/ 2 1/2  hours aside to make bread.

Thank you Uni for sharing your experiments! Living in Canberra it can often take hours for bread to rise (even in the oven, microwave and car)...knowing that using a smaller amount of yeast means I can leave it to rise overnight is really helpful....I'll be trying that soon. I just hope our overnight lows are not too low!

Jam eerie my brother works in Canberra, but lives in Bungendore. He has only been over there for a few years and said he still feels the cold badly.
May all dairy items in your fridge be of questionable vintage.

I do love living here! It's perhaps not the most exciting tourist destination but certainly a great place to live! I'd much prefer a cold day to a hot day....cold days just aren't great for baking bread unless I turn the oven on low for both rises :/

yes Uni 2 tspns - was unintentional to leave the first rise for that long.

I guess I'm wondering if I leave the dough for a long time like that, with that much yeast, can it adversely affect it and make the bread turn out not as well?

Put a batch on tonight with a mix of flour, mostly a seeded granary flour and a bit of 00 pasta flour! Added 15g butter.
Now rising in fridge overnight. Need to take bread tomorrow.
Had previous engagement, now cancelled so back to this one, had promised fresh bread so had to get cracking..

Probably make a plait, or similar. Will report IDC.

Event cancelled will
 Make rolls for freezer.

Have just made two batches of these with 1/4tsp yeast in each to rise overnight.....fingers crossed. It's a relatively warm night here so I've just left them on the bench....will report back in the morning. Thanks ACW and Uni, if this works I'll be stoked!
