Title: Crispy roast vegetables with olive tapenade - Quick Fix Every Occasion

We had these last night with roast chicken for dinner and they were loved by all. I did approximately 300grm of each of the vegetables and didn't steam the sweet potato but did include the pumpkin because I  find sweet potato cooks quicker than everything else when roasting vegetables. I kept the beetroot seperate to the other vegetables and placed them in the bottom tray, and think the Varoma would be at capacity using the full quantities. I also added some cauliflower when putting them in the oven. Next time I would reduce the amount of duck fat as I needed to drain some of it off after cooking for a little while.

I would also suggest following her method of laying in a single layer on a couple of trays as I needed to transfer to a bigger tray so they would crisp up.

I'll definitely be using this recipe again.

I just found it in Alyce's new book QFEO index Judy :D :D :D Just about to link it :D :D Are there two recipes
 with the same title?

Every one loved the veg this way....I only used 50g duck fat & 3 tsp salt flakes, and found that perfect.
didn't tell DD it was cooked in duck fat though or she'd freak out ;D

I bought some more duck fat yesterday but might use this container a little more sparingly

This is another one I have been looking at. Thanks for the review. I think I will get some duck fat but change its container then no one can complain.  :-))

Funny in this house they all ask if I cook all our vegetables in the duck fat!

This is how I roasted a massive tray of veg for Xmas lunch, but I did up the duck fat to 100g, instead of 50g that I usually use.

Maybe I'll reduce the duck fat too. Normally we use EVOO to roast but DF gives a superior finish and flavour.
