Recipe Name:  Guenter's crisp crackers
Book Name:  A Taste of Vegetarian
Tweaking details: Nothing major, just added a seed mix instead of the suggested 1 tbs of poppy or sesame seed.
Review: These were very easy to make and were an instant hit, even with the 4 yo who ate at least 10 straight off the baking tray.  If you are a salt fiend like me you might want to sprinkle some sea salt over the top of the crackers before putting in the oven.  Makes about 60.

Review:  Absolutely loved them.  So easy to make, and the recipe works just as written.  I have paid (I'm embarrassed to say) up to $10 for a pack of Rick Stein Oat Cakes because I love them so much - I think mine would have been flat out costing me 50 cents.  And they were just as good if not better!

Recipe Name:  Spelt and Chicken Salad
Book Name:  Full Steam Ahead
Tweaking details:  I didn't dress the salad as suggested, but used TMX caesar dressing instead.  I also seasoned the chicken with the Boutique Salt from the vegetarian cookbook.  I also used baby spinach instead of rocket.
Review:  This was very easy and very nice.  I was concerned the spelt wouldn't cook in 25 minutes but it did, albeit al dente.  I think the recipe could be a little bland without my tweaks.
Score: (out of 5*):  4.5

All In One Meals using the Varoma / All-in-one-recipes

Not sure which is the best place for this topic, so feel free to move it!

Was wanting to compile a list of all-in-one recipes, such as the EDC meatloaf recipes, and the swedish meatballs from Meat on the Menu.

What are some others?

By 'all-in-one' I mean dishes where the sauce cooks below, and the rest of the meal cooks in the varoma or basket.

I think these types of recipes show off the capabilities of the TMX beautifully when catering for guests.

Questions? Technical Issues? The Survival Guide / faulty machine?!

A very good friend of mine bought a TMX from one of my demos and she has had lots of trouble.  She was constantly getting error messages (i think the numbers were in the high 30s) and then I think the machine stopped working.  Anyway, HQ were very good about it and they had it back to her within a week after she sent it in for repairs.

The sad part is that it has happened again and I was over at her place this morning and she was forlornly packing the TMX back up to have it looked at again.  More error messages but this time it was 20-something.

Has anyone else heard of this happening?  Does it sound like a dud machine?  She is very disappointed, as you can imagine.  She has asked for a replacement machine but apparently the policy is they will only replace if, in their opinion, it can't be repaired...

She has had the machine a couple of months, tops.

Review:  This soup is very easy to make and really tasty.  I loved it.  Note there seems to be a mistake in the recipe (or perhaps I have misread) in that the first step is to put the saffron in boiling water but then the saffron isn't mentioned again (unless it is meant to be a 'seasoning' and goes in with other seasonings?).

Review:

A very tasty dish.  I made this exactly as per the recipe.  My one tip would be if serving more than 2 very hungry adults and a child (as we were), double the meatball mixture.  There was plenty of sauce and enough meatballs say for 3 adult main meals but any more than that and I would double just the meat, not the sauce.  I would also suggest that you do not replace the dill with another herb as the dill gives the meatballs their distinctive swedish flavour (I used dill).  I love a recipe where the sauce cooks in the bowl and the rest cooks in the Varoma.

Score: 5/5 definitely make again.

Babies and Kids / Vege laden pasta sauce

Name of Recipe:  Vege laden pasta sauce
Number of People:  ALOT (makes almost 2 litres)
Ingredients:
3 cups mixed veg (try to use as many different types as possible but avoid leafy greans as they are hard to hide)
1 red onion
2 cloves garlic
20 g olive oil
1 tsp thyme (fresh or dried)
1 tsp oregano (fresh or dried)
1/2 tsp paprika
800 g tinned tomatoes
2 tbsp tomato paste
TMX vege stock concentrate to taste

Preparation:
1.  chop veges in  *: speed 5, 5 seconds, remove from bowl and set aside.
2.  chop onion and garlic speed 5, 3 seconds.
3.  add 20 g olive oil and saute onion and garlic for 2 minutes, 100 degrees, speed 1.
4.  add herbs and paprika, continue to saute for a further minutes, 100 degrees, speed 1.
5.  add veges, tinned tomatoes, tomato paste, TMX stock and cook for 15 minutes, 100 degrees, speed 1, MC tilted.
6.  When cooked, blend to desired consistency.

Adapted from recipe from Feeding Fussy Kids.  The original recipe has 3 fresh tomatoes but I didn't have any so left them out.  The original didn't have TMX concentrate either!

This is my first conversion - please forgive any errors but I think it should be fairly straight forward!

Next time I will halve the bicarb solution.  i read VeryHappyJan's review of another recipe where she said the same thing (this recipe seemed to be from a book?).  I just did rock salt topping but would love to try a sweet version next time - probably cinnamon sugar.  So very yummy.  DH said they were the best he's had and he's had the real deal soft pretzels before.

Served this tonight with pan fried sweet lip - it was delicious.  Be warned - it is very liquidy and could almost be served as a soup - I served the fish in large bowls surrounded  by the sauce.  Both DH and I agreed that if we had ordered this dish in a restaurant we would have been very pleased.  The flavour of the cardamon pods is definitely there, so avoid if you don't like that taste, but otherwise, very impressive.  I love how the UK site has recipes from the best chefs.  So blessed to be able to easily produce this calibre of dish on a Tuesday night!

The recipe made a lovely dough - perfect consistency.  When they didn't rise much I was a little concerned but they turned out beautifully and I would recommend these rolls as a great lunch accompaniment.

Chit Chat / Easter meal planning

Easter is next weekend - has anyone started planning what they will cook over the break?  Want to share your meal ideas?!

The other day I tried to grind a cinnamon stick expecting it to be pulverised - instead it ended up in lots of little shards which were useless.  I did only try to grind one and I read in another thread that ILB said she had better luck with two sticks.

Is grinding cinnamon asking just a little too much of TMX or should I be able to get a nice fine powder?

Has anyone come across this opinion when discussing TMX?  what do you think?

For example, some contend that to truly understand a bearnaise, you need to make it from scratch and that if you have only ever made it in a TMX you don't understand bearnaise.  I tend to agree with that, but on the other hand, there is no way I am making bearnaise from scratch on a regular basis (partly because I have never learned the art but also because I generally don't have the opportunity to concentrate in the kitchen due to a certain 3 yo DD)...

This interests me because so many top chefs swear by the things.  In the UK TMX newsletter they are always featuring Michelin starred chefs who love TMX. 

I am interested in your views.
