Hi
Was wondering if anyone could help me, would like to make the Chicken & Cashews recipe from the EDC but don't want to use the sherry in the sauce, does anyone have any suggestions on what I could replce it with?

I have a list of substitutes and it says orange or pineapple juice maxxie but I'm sure you could also just use liquid chicken stock.

If you use Verjuice that would be a nice substitute. Otherwise as Judy suggested use stock.

Verjuice is a good substitute for dry sherry. But if you need the sweeter sherry then you need a more caramelly flavour - sweeten the verjuice with palm sugar or light brown sugar. You could also try diluting kecap manis. Good luck.

I usually use it when I need only a little white wine and it isn't worth opening a bottle for. (Verjuice)

I always had that problem Cookie as I don't drink dry white wine. I solved it by buying a small cask of Chardonnay for my cooking, it sits on the top shelf of the fridge and can be poured into a measuring cup quite easily. No more wasted bottles of wine ;)
