Chicken Packs (with photo)

Chicken Packs:

Ingredients:

250g zucchini
250g red pepper
130g yellow pepper
200g mozzarella
A pinch of salt
A pinch of black pepper
A pinch of dried basil (i used finely chopped fresh basil)
800g chicken breast (as slices)
1 tsp vegetable salt (I didn't use)
600g water
400g potatoes

Sauce
20gr Thermomix vegetable or chicken stock
40g flour
40g cream


Preparation:

    * Put 100g roughly chopped zucchini and 100g roughly chopped red pepper into TM Bowl. Chop for 6 seconds on Speed 4
    * Add roughly chopped mozzarella, salt, pepper and basil. Mix for 5 seconds on Speed 3
    * Tenderize chicken slices with a meat pounder and make them thinner.
    * Place mozzarella mixture in the center of the slices. Pack them with help of a toothpick
    * Place them in Varoma Bowl. Season with vegetable salt, salt and pepper
    * Place sliced zucchini and chopped red and yellow peppers into Varoma Tray
    * Put water in TM Bowl. Insert steaming basket. Put sliced potatoes into the basket.
    * Place Varoma Bowl and Tray. Cook for 30-35 minutes at Varoma Temperature on Speed 1
    * Set cooked chicken and vegetables aside.
    * Add Thermomix stock, flour and cream into the remaining water in TM Bowl. Cook for 3 minutes at 100°C on Speed 3.
    * Blend for 10 seconds on Speed 10
    * Serve chicken packs together with vegetables and sauce

        Alternative cold tomato sauce from the book

        - Empty the boiling water in TM Bowl.
        - Chop 100g quartered onion and 1 clove of garlic for 5 seconds on Speed 5
        - Add 400g quartered tomatoes, 1 tbsp olive oil, 1/4 tsp cayenne pepper, 1/2 tsp vegetable salt, 1/2 tsp dried basil, 1/2 tsp black pepper and a pinch of sugar. Mix all for 12 seconds on Speed 5

Sure does look good farfa;;ina, but don't know that JD will be having that creamy sauce  ;) ;)

i make this sort of meal quite alot, it so quick and easy and a whole meal all in one!  for the sauce i also put some white wine in it to and it tastes very nice!

I gave an alternative tomato sauce recipe for JD ;)

Wine could be nice addition em. I try next time

Looks lovely. We had chicken burgers last night and I used your idea of minced chicken and added bits and pieces to it for the meat.
May all dairy items in your fridge be of questionable vintage.
