Raw Creamy Strawberry Pudding - for kids

I have been making this as desert lately for my kids as we are trying to reduce wheat and dairy a little (my husband and i have been eating the rest too!).  Its meant to be a yoghurt type treat.

Adapted from: Baby Greens (Lynn/Chrisemer)

Ingredients

1 1/2 cups (220g) fresh strawberries (or frozen, thawed) 
1 cup (120g) avocado ie one medium avo
1/2 cup dates pitted and soaked in 1/2 cup water for 6-8 hours (keep soak water)

Blend all ingredients - adding extra water, soak water or nut milk to thin.  I used sp 5 for 30-50 secs and didn't add any extra liquid.

You can mix through some finely diced strawberry at the end.  I just did it by hand with the spatula before serving it up.

My 3yo thought it was chocolate ;-)

Ruth, I have just bought the ingredients to make this (not for the kids, for me :-))) and when I weighed 1/2 cup of dates it only weighs 75g.  Do you mean 1 cup perhaps?

sorry about that.  Its definitely half a cup.   My sons first bday today so only just saw your message.

I weighed them as I was putting them into the thermomix, ie after they were pitted and soaked.  However that still sounds a lot more than your weight so sorry if its wrong, I will check again next time.   it was a waste of time probably putting a weight on it in this case, I was just trying to do the proper thing but in this case has made it more confusing.  I think I will just change it to half a cup as the soaking needs to be done in advance anyway.

It will be interesting to see what you think.  I also mixed in some finely diced strawberries at the end, just by hand with the spatula before serving.  It makes it a bit more "adult" ;-0

Ruth, we cannot do this recipe just for the kids as it is too delicious.  Loved it and the flavour of the strawberries is the predominant flavour.  Thanks for posting this one, it's a little beauty.

It's great. Really nice.

Next time I am going to soak the dates in orange juice - I think that will work really well with the flavours.

I am so glad you liked it judydawn, and others too. I loved your pic, looked much better than mine, and a lot lighter too but maybe thats just the flash.  I will see if there is anything else good in the book.
