Babies and Kids / Re: Annabel Karmel's Zucchini and pea "soup"

The main thing I have found when making her recipes is that I need to reduce the liquid by half as there isn't the same amount of evaporation that you get when cooking on the stove top.

I made this last night with peanut butter and it was delicious!

Questions? Technical Issues? The Survival Guide / help with shortbread
« on: December 14, 2011, 06:19:20 am »
I have made shortbread using 3 different recipes in my search to find a nice recipe, and my biscuits all seem to end up crumbly.  I've tried the one from this thread (CarolineW's I think?), the one from the EDC, and another one which was given to me by a friend.  Does anyone have any suggestions as to where I could be going wrong?

Have you tried the chicken nuggets from Annabel Karmel's 100 top finger foods?  They are absolutely delicious.  The only use of egg is in the usual flour, egg, crumb process so if you can somehow crumb them without using egg then they would fit the bill.

Main Dishes / Re: Beef Enchiladas - With photo

I found this recipe on my robogourmet app and it is pretty much identical except that it has 300g beef mince and 400g kidney.  It doesn't mention the kidney beans in the instructions though, so I just wondered if anyone could enlighten me as to when to add them?  I'm not sure whether to cook to them as part of the enchilada sauce.

I find most of her recipes convert well to the tmx as long as I remember to halve the liquid to allow for the lack of evaporation.  I made the salmon cakes from her 100 top finger foods for ds this afternoon who has been a bit fussy due to a bad cold, and he wolfed it down.  I find her food really tasty, especially the finger foods.

I've made this a couple of times now and my 10 month old loves it.

It sure does.  It feels like no effort at all now to whip up some bread, whereas before it would have consumed the whole afternoon.  Motherhood makes you a very efficient multi-tasker as I'm discovering!

the first thing i cooked was the pasta with tuna from EDC and it was really easy and really yummy.  My Dad had dropped in and couldn't stay long so I had 30 minutes to cook dinner in a machine I'd never used before, while also bathing the baby, and it turned out beautifully.

My husband made this last night using his freshly caught squid.  The only complaint we both had was that it was VERY salty, and it seemed to get worse the more we ate.  Next time we would substantially reduce the salt or even leave it out altogether.

Introduce Yourself / best thing I ever bought!

Hi all  :)

I have had my tmx for just over 3 weeks now and absolutely love it!  I made hot x buns and fresh honey cinnamon butter on Saturday, and they were absolutely divine.  This morning I've whipped up some Anzac biscuits and am just waiting for Isi's 'normal' bread to peep through the top of my tmx lid.  Tonight I'm going to try Steamed Ginger Chicken with garlic rice and veg soup.  I make all my baby's food in it - it is such a breeze.  I think the biggest hit by far has been Rara's Cherry Bites.  I made them to give out as Easter eggs this year.  My sister had never considered getting one but says she's finding it hard to think of reasons not to buy one after seeing how much use I'm getting out of it.  I especially love the fact that I can just whip up some soup for lunch or dinner at the end of a long day, and it can cook itself while I settle the baby.  It's better than a toasted sandwich, and even easier I think.
