Title: Sweet Corn Chicken Soup

Name of Recipe: Sweet Corn Chicken Soup

Ingredients:

500g chicken breast, cut into 2cm chunks
2 tsp potato flour or cornflour
1/2 tsp salt
2 tbsp water
1 litre chicken stock
1 can (420g) creamed corn
1 tsp sesame oil
1/2 tsp salt, or to taste
2 tbsp potato flour mixed with 2 tbsp water
1 beaten egg

Preparation:

Place chicken, flour, salt and water into TMX bowl. Hit Turbo 3 times to chop the chicken and mix the meat with marinade. You may need to chop it more, but don’t make mince out of it. Look after each pulse on the Turbo. Remove and keep aside.

Place the chicken stock in TMX bowl and heat for 5 minutes at 100°C on speed 1. Add marinated chicken and cook for 3 minutes at 90°C on reverse + speed 1.

Add creamed corn, sesame oil and salt and cook for 5 minutes at 90°C on reverse + speed 1. Once the blade is turning then pour in the thickening through the opening in the lid and continue cooking until mixture thickens.  Check to see if you need to add the extra salt  
Once thickened, slowly pour in the beaten egg through the lid and stir until there are soft strands through the soup. It only takes a few seconds. Stop the TMX and serve.

marmee - Didn't use sesame oil or egg due to allergies here, and had no cornflour, so used double the amount of GF plain flour - and just delicious.

cathy79 -  I used my vegie stock concentrate (about 5 desertspoons).  And instead of creamed corn, I added a can of chickpeas.  I know it goes against the name, but as DH is allergic to corn, that's what I have to do.

Casper - This recipe is also fabulous with the addition of crab meat.  Follow the recipe and before you add the egg at the end, spoon in 170g of canned crab meat (drained).  If you like, you could leave the egg out entirely since the egg is just to simulate crab meat anyway.

JD -  Makes a good 6 serves.  I used 400g defatted chicken thigh meat, added 3 finely chopped shallots & 1/2 tspn soy sauce just before pouring the thickening in to give it just that little extra flavour and will cut the potato flour thickening to 1 - 1.5 tblspns next time.

Tam - I used Chelsea's creamed corn recipe (http://www.forumthermomix.com/index.php?topic=1618.15). It turned out as a chowder (but that was because of the delicious creamed corn).

Oh my!

This is delicious - reminds me of the Chinese style chicken and sweet corn soup of my younger years, which over the years I came to dislike.  This is just sooo yummy.

Chookie, I'd just substitute the chicken for crab.  If you can get it then the raw meat.  Nice.

I can't believe this posting escaped my attention as it is my favourite soup of all time.  Made another trip to the health food store today (they'll be getting to know me after all these years) to buy the potato flour and will be making it at the weekend.

Made this today (even when it was 380+  :o :o :o) but my little bro was here and we just needed something quick and filling. Very yummy and is in the keeper file now.

I used my home made chicken stock paste so was a little salty for us (as we are not salt people) so would leave the salt in the recipe out the next time

Yes - I'm back and having been impressed with several winners - especially this one. Made heaps and now i have some frozen "easy" and healthy dinners ready to go. I think i might have to start stalking your posts - you seem to always have some fantastic ones!!! Thanks and keep them coming.

loved this!
  i only put about 2/3 of the tin of creamed corn in and found it was plenty.
My Husband loved this and is a big fan of soups so i think this will be a regular dish but he did also say it had maybe a bit too much chicken in which is fine by me, less chicken the cheaper it is to make  :)

Oh yum, I just made this, its delicious!  I'm a huge fan of chicken and sweetcorn and crab and sweetcorn soup from the chinese but really can't tolerate msg.  This soup is even nicer and has a great "clean" taste about it.

Its darn cold here in the UK so I'm going to be cooking variations of this for several months!

Made this one tonight as I was out late and completely unprepared for what to make for dinner.  Grabbed some chicken breast from the freezer and very roughly chopped it then blitzed in TM.  Didn't have any potato flour so just used an extra tbsp of corn flour.  Really simple and yummy.

I made this a few days ago and we all enjoyed it very much - I used Chelsea's creamed corn (http://www.forumthermomix.com/index.php?topic=1618.15) recipe. It turned out as a chowder (but that was because of the DELICIOUS creamed corn). This will be on high rotation over Winter

This was a quick and easy dinner for last night.  Got rave reviews from DH who had 2 servings but the boys still wouldnt eat it - even though i called it corn juice it still didn't work!

Not sure about the drizzling of the egg before freezing athsstar.  I think I would make it to that point, freeze it and when reheating, do the drizzling bit then.
