I don't bother "stuffing" or "wrapping" the meatloaf - too fiddly for me.  But the recipe is delicious and moist, and leftovers are really nice sliced on sandwiches.

Recipe Requests / potato bake

Gradually going through the pantry and getting rid of things I don't want to cook with anymore.  Came across a tin of "Cream of Chicken Condensed Soup" which I would use for potato bake.

Has anyone got a more wholesome, natural recipe?  Potato bakes are always a hit at BBQ's and it's almost summer.

Chit Chat / Teaching Kids to Cook

My DD is 4.5 and loves to cook muffins, or anything she can get her hands in.  I want to teach her the cooking basics (sift, stir, measure etc) without TMX so she learns the skills and to follow instructions etc.  And not be reliant on a machine.

Any tips on teaching the joys of cooking?  What age should I introduce knives (scary) for cutting, dicing?

These were so easy and delicious.  They would have to be cheaper than bought meatballs, let alone healthier as they're baked in the oven.  The mixture would probably make great hamburger patties.  And I reckon the recipe could easily be adapted for beef mince, maybe with semi-dried tomatoes, capsicum, mushrooms - whatever takes your fancy.  YUM

Suggestions and Complaints / cleaning old posts

I have just been looking through the 'recipe tweaks' thread to find corrections etc for my EDC cookbook.  And I have a suggestion that I hope can be looked at positively and not as a complaint.

Some of the threads are getting a little dated and Huge!  I was wondering if they can be "cleaned" after they get a little stale.  Just thinking that as this forum gets older and bigger and better, it is going to get harder to find the "recipe tweaks" amongst the other "stale" comments which are no longer relevant.

Just to be clear, I am loving this forum and finding it very inspiring.  But also time consuming as I trawl through threads trying to find what I'm looking for.

I made the meatloaf with red sauce.  The meatloaf was delicious, even not stuffed and not wrapped (too fiddly for me).

But the red sauce, not for me!  It was very sweet, almost marmalady (if that's a word).  What I'd love is a good tomato based sauce.  I could try the red sauce without the sweet potato as I think that was the problem.

Any ideas to share?

Babies and Kids / Muesli Bars

Name of Recipe:Muesli Bars (adapted from Better Homes & Gardens magazine)
Ingredients:
40g dried apricots
40g dates
25g sunflower seeds
35g pumpkin seeds
25g pecans
25g almonds
65g desiccated coconut
35g wheatgerm
110g rolled oats
25g oat bran
15g sesame seeds
40g craisins or sultanas
200g unsalted butter
1/2 cup honey
3/4 cup rapadura sugar

Preparation:
Place apricots, dates, pecans, almonds, sunflower seeds and pumpkin seeds in  *:, speed 10 approx 5 seconds in bowl.
Add coconut, wheatgerm, rolled oats, oat bran, sesame seeds, craisins or sultanas in  *:, speed 1  :-: approx 5 seconds or until mixed.  Set aside.

Put butter, honey and sugar in  *:.  Cook at 80 deg, spd 1 about 6 minutes until mixture is caramelly.  Stir caramel into muesli mixture.

Press combined mixture into lined baking tray.  Lay a sheet of baking paper on top and press firmly with a flat tray to compress slice.  Allow to cool completely.  Store in an airtight container and eat within 7 days.

Tips/Hints:
The original recipe includes dried peaches, but I've never seen them and it's fine without.  You can add or omit whichever ingredients you like, but I try and keep approximate dry/wet/fruit etc ratios the same.  Eg exchange nut type with another nut etc.

You can chop the nuts etc as small or as big as you like.  My kids are still getting used to the texture, but I'll gradually make them more crunchy.

I make this recipe about once a fortnight and usually give away half each batch.

Introduce Yourself / new to thermomix

Hi everyone

I received my thermomix on Tuesday, and have already cooked 3 dinners, 1 dessert, 1 breakfast, 1 soup (very easy, but didn't really like it) and the stock concentrate.  Have plans to make dip for a party on Saturday, and a salad for Father's Day lunch.

So far I'm really pleased with how it's going.  I love the fact that it's a self stirring pot as it frees me up to do other things.  Am looking forward to getting more confident and experimenting with converting favourite recipes.  I'm also excited about starting to make my own bread, particularly considering what's about to happen to commercial bread this month.

Looking forward to sharing new recipes together
