Main Dishes / Fricasse Chicken
« on: January 06, 2010, 12:20:32 am »
As a child my mum use to make this all the time so last night I tried it in the TM and it cooked perfect, I could never make the sauce without lumps now I can

Name of Recipe: Fricasse Chicken
Number of People: 4 with rice
Ingredients:
1 BBQ chicken
Bechamel sauce from EDC
seasoning
Chiken stock

Preparation:
Make the bechamel sauce from EDC but use half the milk and half chicken stock, cook as per recipe
Add chicken and cook for 15mins on temp 100  :-: and on  ^^
Serve with rice
My husband thought made this way was the best I have ever made it.

Caroline J - Made this but found by the time I had added a load of vegies and the chicken, I wished I had made a double batch of the sauce.  Will do that next time. The kids wolfed this down but I would probably add onion and garlic next time for a bit more oomph for the adults. Thanks for the recipe- a quick one that's perfect for the kids.

I have also added vegies, garlic and onion to this and use it as a pie filling.  It's YUMMY!

Just wondering if anyone has made savoury mince in the TM. I am thinking all I would need to do is add everything to bowl and cook on  :-: on  ^^ and then thicken with cornflour at the end. Any other suggestions, or what would you do.

Cakes / Banana Bread
« on: December 21, 2009, 05:20:03 am »
This is my first attempt at converting my recipe into TM friendly recipe, so thought I would share.

Banana Bread

2 bananas
110gram sugar
1/2 teaspoon bi-carb soda
1/2 teaspoon mixed spice
60 grams butter
210 grams boiled water

Place all ingredients in  *: and mix for 20 secs on speed 4

Add 280grams S R flour to  *: and mix for further 30 secs on speed 4.

Pour mixture into loaf tin (I use tupperware silicone form) and bake 30-40 mins in moderate oven
Cool in tin for 5 mins

Serve spread with butter if desire.

You can swap bananas for 1 cup of chopped dates if you would prefer date loaf, think you might have to mix on  :-: if using dates.

Hope others enjoy this easy recipe.

Darls -  Lovely cake!! Made it at the last min for an arvo tea at a friend's place.
The only thing I find an issue is the bottom part, not the crust, is not fully cooked after 40 mins in oven? It was a bit undercooked if it could be possible however the top is quite cooked. So it is like 2/3 of cake is cooked while the bottom 1/3 is not... I can't work out how to slow down the top? I've turn oven at 160c fan forced . Any ideas? None left at end anyway, kids loved it. Cheers with thanks for sharing the recipe!

JD - Haven't done it myself darls but I would probably cook it at 180oC myself.

Thermomixer - Did you use a metal loaf tin?  If so, you could place it on a pizza stone or cast iron tray to get extra heat into the base. Maybe try the higher temp as JD says. Ovens and ingredients vary - so may have just needed a little longer.

GNMI - Delicious! I threw in 3 bananas and some chopped dates, also sprinkled cinnamon sugar on the top - YUM!  So moist -will not last the day in this house!

Caroline J - I added  the dates too, thanks for the suggestion GNMI.  I did them in little cupcake pans, yum!

simplyrhonda - Made it yesterday for tomorrow's playdate but my kids couldn't wait until then. They gave the bread 2 thumbs up. Cheers.  Great recipe, delicious. The mixed spice is a nice touch. Will make it again.

Chelsea - Yes this recipe is great!  Simple, economical and delicious.  I tweaked the ingredients, but followed the method 100%.
Here were my ingredients:
40g dates (I chopped these in the TMX first)
2 bananas
100g rapadura
1/2 tsp bicarb
1/2 tsp mixed spice
60g butter
170g boiling water
260g white spelt flour
2 tsp baking powder

Many thanks Willmac!

My Mum has been making this often as it is one of the only cakes that my Dad can eat (restricted diet waiting for gall bladder op).  They are really enjoying it and are now making the banana version, the date version and a yummy new apple version.

Apple Version:
Substitute the bananas for 2 medium peeled and grated apples.
Substitute the mixed spice for cinnamon.
Sprinkle cinnamon and sugar (or rapadura) over the bread before baking.

I use to make these before I got my TM, now I am wondering how I could make these using my TM, what I have to do is crush the biscuits (know how to do that) then I need to add Philly cream cheese and mix until all combined, could someone help me with this, do I use the butterfuly, do I have it on reverse and what speed would I use. Hope someone can help me as these are so yummy and I would love to be able to do them in the TM so they are easier and quicker to do.

Thanks in advance
