Title: Garlic Confit Recipe.
Post by: Bootobethin on May 11, 2014, 07:54:09 am
I have just been given about two kg of beautiful garlic!
Is there any one who could pm me Tenina's Garlic Confit recipe as I don't have her book.
If there are any suggestions of how to use the garlic that would be great.
I don't want to waste one clove.

I'd make her garlic paste from FFS as well if you have enough garlic. They are both delicious.

Lucky you BTBTN.
I bought 3 large garlic from the farmers market this morning with the garlic paste in mind. $2.00 each, was happy with that.

I hadn't made the confit garlic until the other day. I am very impressed. I also love the paste.

Boot, if you want to try the garlic paste recipe you will find it as part of Tenina's recipe for caramelised garlic tart  (http://tenina.com/recipes/caramelised-garlic-tart)on her website.

Thank you JD.
Sounds good
When cooking the garlic do I cook the whole bulb then cut top off and squeeze the cloves out.
Or are the cloves cooked separately and then squueezed?

Cook the whole bulb and just squeeze the cloves out once you've allowed it to cool a little.
