Recipe review - citrus curd - For Foods sake - pg. 16
« on: August 19, 2012, 01:01:39 pm »
This is a lovely, tangy curd, and I like the fact it wasn't over the top sweet as some can be.
I used equal quantities of lime & lemon juice/zest.
Popped it in a tart shell, and dessert was done  :-*

I did the same last weekend CC. Gave two jars away and had rave reviews and one even returned the jar! Bit of a hint I think. As Maddy says, it's not too sweet.  Will be making again and again.

Love.  Thank you, Tenina.  Ours was with mandarin and a bit of lemon.  Mmm.  Another batch coming up!

Yum, yum, yum!

I made this tonight and thought it was going to be a complete and utter failure as i initially overlooked adding the eggs (errrr, duhhhh).  Went back, added the eggs and cooked again as per the recipe.  It seems to have worked out perfectly.

I tried a bit of it tonight mixed in with my homemade yoghurt and it was delicious.  Such a quick and easy recipe.

Sounds like another one I need to try. Mum has bought me this book for Xmas and everyone is saying how delicious the recipes are. Only forty something more sleeps to go.

Made this tonight to give away as some Christmas foodie gifts, I cannot believe how quick and easy it is!

I made as per recipe and used about 85% lemon juice and then a mix of orange and lime juice for the other 15% (using up my naked fruit after using the zest!).

It filled 6 x 100ml jars plus a teeny bit left over for me (and the lid to lick too!)

Absolutely delicious, however, next time I might not use as much lime zest as it has a bit too much 'tang' for my liking - it was a large lime though!

an impressive curd!

I made a half quantity today with the following tweaks:
50ml passionfruit juice (passionfruit pulp pushed through a sieve to remove the seeds) - this was 5 passionfruit
30ml lime juice - juice of one lime
20ml lemon juice - juice of half a small lemon

I omitted the zest and cooked at for 6 minutes (rather than 8 minutes) at 80c speed 6 and then 1 minute and 30 seconds at 90c speed 6.

I also used jumbo size eggs.  Of the three I used, two were double-yolkers (how fortunate!) so the curd was two egg whites and five egg yolks.  This probably contributed to how brightly coloured and delicious the curd is.

I think it made about 375ml of curd.

I will be making more!
