Chit Chat / A day in the life of Dede :)

Days of our lives part 2.

Last night my friend rang from hospital to say she had a CT scan and fluid was found outside her bowel and a big infection, and that she would have to have antibiotics for a couple of days to see if it cleared up.
(Bit of relief that the problem had been found)

This morning I get another call from my friend to say she started throwing up blood and that the doctors were going to put a camera down her throat to investigate.
(Bit of panic started setting in :( )

So got all the kids organized and ready for school, dropped them off and pegged clothes on the line,

Then my mobile rang and its my sister :o, she told me she has to go to hospital to be induced today as its quiet in there at the moment.
(Ok fine I can do this, 2 extra kids is ok, and a bit of excitement kicking in as well as worry for my friend)

The phone rings again and it's my friend again, she sounds really bad, she now heading for emergency surgery as she has a perforated bowel and has to have a bag for 4-6 months :o
(OMG I'm a mess now and really scared for her)

I now have to ring my friends mum to tell her what's happening, then my mum to tell her what's happening.

My sister turns up to drop off Jackson, then I go to my friends house to get her some clothes and personal items. I have been to the hospital to drop the stuff off (she was in surgery when I got there)
Went and seen my sister in Labor ward who was about to have her waters broken.

Now I'm home with Jackson pacing back and forward waiting to hear some news.

Chit Chat / Energy saving light globes

I'm looking into changing my light globes throughout my house to help drop power usage, I have read a bit of info about the LED globes but they are quiet expensive, and I'm a bit confused on the type of globes available that suit different areas of a house.
Anyone got any suggestions?

Cakes / American Quick Loaf (Date and walnut loaf)

Ingredients
1 cup chopped dates
1 tsp bicarb
1 Cup Boiling water
120 g Chopped walnuts
50 g Butter
120 g Brown sugar
1 egg
240 g Self raising flour

Directions
Preheat oven to 180, grease and line loaf tin
Place dates in a bowl, sprinkle with bicarb and pour over boiling water. Sit aside
Add butter and brown sugar to TM and mix 30 seconds speed 3
Add egg and mix 10 seconds speed 3
Add date mixture, walnuts and flour, mix 10 seconds speed 3, mix a little more with spatula to make sure ingredients are incorporated.
Pour into prepared tin, bake 45 - 50 minutes.

I am thinking of getting one of these Map Presto coffee machines for DH for fathers day, but as I know nothing about coffee as I dont drink it, I was wondering what others thought of it? and are these kind of capsule coffee makers any good?

Non Thermomix Recipes / Wicked chicken wings

Tried it tonight after marinating the wings for a day, and really enjoyed by all.

Marinade for wings

1 kg chicken wings (wingettes and drumettes with skin)
1 tbs red chili paste
1 tsp garlic paste (just realized I used 1 Tbs :o) was still yummy :D
Some salt
Some red chili powder
2 tbs vinegar

Ingredients for coating

2 eggs
1 cup corn flour

Ingredients for crumb mix

1 cup flour
1 cup bread crumbs
Some salt
Some cracked black pepper

Directions

Make up marinade and pour over chicken wings, make sure they are covered evenly. Leave covered in fridge for at least 12 hours.

12 hours later

Pre heat oven to 190, line a baking tray with baking paper and lightly spray with cooking spray.

In a mixing bowl beat eggs and add corn flour and mix to a smooth paste (make sure there are no lumps)

Coat each wing in the cornflour mix then coat evenly in the crumb mix. (mix all crumb ingredients together in another bowl)

Place on baking tray

Once all wings are coated and on tray spray them with a light coating of cooking spray.

Bake in oven for 10 minutes, turn over and bake further 5-10 minutes until golden.
(original recipe was for deep fried wings, but I choose the healthier option of oven baked)

Cakes / Madeira cake (orange or Lemon)

This recipe come from the Taste.com.au web site.
The original recipe was for a lemon Madeira cake but as I didn't have any I made an orange Madeira cake instead. I have not had any but the family said is really yummy.


Ingredients

175g softened butter
150g sugar
1 tsp finely grated lemon or orange rind
1/4 tsp ground cinnamon
3 eggs at room temp
120g self raising flour
50g almond meal
60mls lemon or orange juice

Preheat oven to 160 c
Grease and line the base and sides of a 8x20cm loaf tin
Place sugar into TM and mill 10 seconds speed 8.
Scrape down and add butter, lemon or orange rind and cinnamon.
Mix speed 3-4 for around 1 minute or until pale and creamy, while blades are still spinning add eggs one at a time through MC hole. (you may have to stop TM and scrape down before continuing)
Add flour, almond meal and lemon or orange juice and mix for 10 seconds speed 2.
Remove lid and mix gently with a spatula until just combined.
Pour into prepared loaf tin and bake 45 minutes or until skewer inserted into the middle comes out clean

Cool in tin for 5 minutes before placing onto cooling rack.

Once cool ice with lemon or orange icing

Icing

230g icing sugar
1 tbs lemon or orange juice (approximately)

Mix together in a bowl, drizzle over cake and allow icing to set for 1 hour.

Now grab a knife and cut a good size slice and place in mouth :D

JuliaC83 - Made an orange version of this cake - beautiful flavour and texture. It's not my idea of a Madeira cake though as it's quite dense and moist. However, I will definitely make it again as it's lovely. Enjoyed making my own almond meal too.

Cakes / Light and airy Yoghurt pikelets

Ingredients

4 eggs (separated)
50 g sugar
500g yoghurt (any flavor)
60g melted butter
210 g plain flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Make sure TM bowl is clean and dry.
Insert butterfly in TM, add egg whites, whip 2 minutes speed 4 until egg whites are fluffy.
Remove butterfly (but don't wash) and place egg whites aside in another bowl.
Place butterfly back into TM, now add egg yolks and sugar, whip 1 minute speed 4.
Now add melted butter (I melted in microwave) and yoghurt, mix 10 seconds speed 4.
Add flour, baking powder, baking soda and salt and mix 10 seconds speed 3.
Add egg whites and fold in gently with spatula until just combined.
Cook spoon full in medium hot pan and turn once bubbles form on top of pikelets  

This mixture is quiet thick so needs spreading out a little with back of spoon.
I used Honey Buzz yoghurt today and the kids loved them.

Chit Chat / Indoor Grills (any recommendations ?)

I'm looking at getting a grill of some sort for grilling meat mainly. I hate oven grills (and mine is crap)
We once had a George forman grill years ago and that was great until the non stick stuff got scratched and we replaced it with another gorge forman with the removable hot plates but we found that it didn't heat very well.
Now I'm looking at buying another one but not sure which brand to go with.
Any recommendations?

Anyone with an iPad three use the voice recognition? It's not that easy to Euris and it makes quite a few spelling mistakes wife out now. But it's Come to Urese

Diet / Weight loss Challenge

Ok who would like to join me on a weight loss challenge. We can all support each other to loose those unwanted Kgs.
I'm going to use the My Net Diary app to keep a track of my calories and update each week how much weight I have lost. Maybe we could have a weigh in day once a week?
Do we want to say how much we weigh and our goal weight?
Any suggestions?
CP suggested maybe a photo From the neck down to start with then an updated photo every 5kg lost?

Thought I would give its own area as I'm finding it really good stuff.


Miracle Spray
Ingredients:
1.5 litre water (1 cup boiled)
300ml white vinegar  
60ml dishwashing liquid  
25ml eucalyptus oil
3 dessertspoons "Lectric" soda (washing soda)

Method
Mix washing soda with about 1 cup boiling water to dissolve, add remaining  ingredients, pour into a 2 litre bottle (I use the vinegar ones).

To use
This nearly fills the 2 litre bottle, then I decant (don't you just love that word) into spray bottles for benches and laundry, and refill old toilet cleaner bottles to squirt under the rim in the loo etc.  It's also good to spray on the floor on tough stains, you know the stuff you dropped when cooking that dried. I originally found the recipe from another site and just tweaked it a bit. I love it, as I try to minimise the use of chemicals around the house. With the collars and cuffs, try to spray and leave to soak for a few minutes works best I've found, so I spray as I sort, then do the whites second rather than first load to give the spray a chance to work.

Hi everyone, again I have ran out of GB for the month. Everything is slow and painful and I can't stand it.
Anyway at the moment I'm with Telstra and have a 25GB plan and in the last 6 months we have ran out every month except for February.
I'm looking at upping my GB and wondering what providers people recommend (for Tassie)  I'm unsure who is available here as I have always been with Telstra. I'm looking on the Internet (although it's very slow at the moment) but would like first hand recommendation by people I trust (you guys)

Chit Chat / Help with mud stains

My DS 16 come home from football yesterday with mud caked all over his footy gear. I have washed everything but his white (yes white) shorts (2 pair) are still really stained. I have scrubbed them with SARD soap but there are still stains. I don't want to bleach them as there is a red stripe down each side (he wouldn't be impressed if they turned pink) ;)
Any other suggestions.

Cakes / Raspberry Coconut slice (Lowfat & Sugar)

Raspberry Coconut Slice


Ingredients
50g Butter
90g caster sugar
1 Egg
45g plain flour white flour
45g plain whole meal flour
45g self raising flour
1/2 cup raspberry jam (today I used Strawberry)

TOPPING
1 egg beaten
50g caster sugar
90g coconut

Directions
Preheat oven 180 degrees and line slice tin with baking paper
Place butter and sugar into TM, mix 30sec speed 3
Add egg and mix further 19 sec speed 3
Add flour, mix till combined speed 3
Spread evenly into prepared tin (with lack of butter it's a little hard to spread so I use the back of a spoon wet with water). Bake 10 minutes.
While still warm spread base with raspberry jam
Combine all topping ingredients in TM 29 sec, speed 3
Sprinkle topping evenly over base
Bake 25 minutes, let cool completely before slicing.

I use this recipe to replace some butter in my baking

Apple Purée
I got this recipe from easycooking.ca

Ingredients
60g water
juice of 1/2 lemon
4 apples, peeled, cored, and quartered
1/4 tsp. ground cinnamon (optional)

Directions
1. Place water and lemon juice into TM bowl; with blades running on speed 7, slowly drop prepared
apples in through the lid
2. After last apple, turn off speed and scrape down sides of bowl, using spatula
3. Add cinnamon; cook for 10 min. at 90 degrees on speed 1
4. Puree an additional 10 sec. on speed 8
5. Cool and serve
Note: If you prefer a sweeter taste, add 30g sugar with the water and lemon juice. For a smoother apple sauce, simply mix longer on speed 8.
