Title: Prawn Curry

Name of Recipe: Prawn Curry
Number of People: 4
Ingredients:

40 g Olive Oil
2 Large Onions
10 g fresh coriander
20 g Freshly peeled Ginger
3 Garlic cloves
2 teaspoon Cumin
1 teaspoon Saffron Powder
1 teaspoon of Tumeric
1 teaspoon Salt
500 g peeled prawns
70 gr tomato Sauce
400 g coconut Milk


Preparation:

Add the Olive oil in the bowl, and programme for 1 minute, varoma speed 1.
*Add the onions, coriander, ginger and garlic and chop for 10 seconds speed 5.
With a spatula, push down the mixture from the sides of bowl.
Programme for 5 minutes, varoma speed 2.
Add the cumin, saffron powder,, Tumeric and salt and programme for a further 5 minutes, 100ºC speed 2.
Add the prawns, tomato sauce and coconut milk and stir briefly with spatula, then programme for 12 mins, 100ºC, counter clockwise.


Tips/Hints:

Serve with Basmati Rice, Popadoms, Tomato and Onion Salad, and of course, Mango Chutney

Love curries - this sounds yummy.

Seems like a lot os turmeric and saffron - very generous amounts.

I sometimes use more. I had to cut down on quantities for this post. LOL. I love my spices. An idea is also to halve the amount of tumeric and Saffron, and add a teaspoon of Garam Masala. Try it. gives it that extra edge!!!
