Title: Preservative Free Apricot Chicken *with photo*

Name of Recipe: Preservative Free Apricot Chicken
Number of People: 4-6
Ingredients:
1 large Onion
2 Tbspn Butter
1 Tbspn VSC
500g Chicken Thigh/Breast
6 small Apricots
200mL Apricot Nectar (Berri Brand, contains 330, 160b)
1-2 Tbspn Cornflour mixed with a little water.

Preparation:

Quater Onion and Place in  *: chop for 3 seconds speed 7, add butter and cook for 10 min  :-: speed 2, add VSC and cook a further 2min  :-: speed 2.
Add in diced Chicken, halved and de-stoned Apricots and Nectar, cook 15 min  :-: speed  ^^ adding the Cornflour mixture in the last 4min.

Hints/Tips:

Store in Thermosaver while cooking rice/mash potato and steaming vegetables.

Babymaker, that looks great.

Not sure whether you've seen this post for Apricot Nectar as it went up before you arrived I think.

Can't remember if anyone has tried it, but if you're using fresh apricots, may as well go the whole way.

Just wondering what temperature this is meant to be cooked at?

Yes, I was wondering about the temperatures as well, but the recipe looks great and my kids absolutely love apricot chicken so will definitely try this one out. In fact, I have some frozen cicken thigh fillets defrosting in the fridge as we speak, so tomorrow night I will try this recipe out as long as you cam confirm the temperatures the TM, babymaker, but thanks anyway!

I'd cook it at either 100 or 90oC even Merlin.  With thigh fillets, I usually cook on a lower temp and a tad longer and cut the pieces fairly big dice too. If they aren't moving around enough, put it up to Speed 1, reverse.  Just check after 15 minutes and give another 5 mins or more if necessary, adjusting the liquid if you think it needs some extra.  Should be fine though, the photo shows plenty of juice.
