I made these again yesterday. After finishing the kneading I realised I had used plain flour rather than self raising. I added 1 teaspoon of baking powder and half a teaspoon of bi carb then kneaded for another 25 seconds. They still came out perfectly. I recommend adding a sprinkle of raw sugar before baking for a crunchy coating, rather than icing sugar at the end of cooking.  They are very light and quick to prepare and cook.

A shame this recipe isn't in the new EDC.  I think it is brilliant.

I made these on Tuesday as well and they were delicious. Sent them all to DHs train club (minus one). I sprinkled them with sugar before baking as I remember Mum doing this. These will certainly be made again as they are not like we made at school.

As the recipe is not in the New EDC are you able to post it? I love rock cakes but haven't made them for years.

Rock Cakes.
20g sugar,to sprinkle over the top
Rind of 1 lemon or 1 tsp vanilla extract or Rum essence.
90g sugar
240g SR flour
60g butter,chopped into pieces
1 egg
80g milk
60g currants
Preheat oven to 180c
Place 20g sugar into TM bowl and mill 19sec/speed 9 Set aside.
Place lemon rind in TM bowl and grind 5-10sec/speed 8
Scrape down sides with spatula.
Add sugar,flour and butter.Mix 10sec/speed6
Set dial to to closed lid position and add egg,milk and currants and  :: for 20-40 sec ( Add sufficient milk to make either a stiff or moist mixture depending on how hard you want your rock cakes)
Place dessertspoons sized heaps onto greased tray and bake for 15-20 minutes.
Sprinkle icing sugar over the top and enjoy.

Thanks CC. I can put this straight into paprika now.

I make these a lot for lunch boxes. There are fast and fabulous.
