Name of Recipe: Asian Flavoured Chicken Stew
Number of People: Serves 3 as is, just add more vegies to stretch it to 4 serves.
Ingredients:
120g onion, cut in half
1 clove garlic
1 to 1.5 tspns sambal oelek (or use a fresh chilli to taste)
2cm piece fresh ginger
1 tblspn vegetable oil
500g chicken thighs, cut into 3 (I had 410g after defatting them)
250g water
1 tspn veg stock concentrate or a chicken stock cube
1 tblspn soy sauce
1/2 tblespn honey
1 large carrot, julienned
handful of green beans, sliced
1 medium zucchini, cut in half and sliced
2 tblspns cornflour mixed in 2 tblspns water
Preparation:
Place the onion, garlic, ginger & sambal oelek in the TM bowl and chop for 2 seconds on speed 5.
Add the oil and saute on Varoma temp for 3 minutes on speed 1 Reverse with MC off.
Add chicken and cook Varoma temp for 3 mins on Reverse, speed 1 MC on.
Add water, veg stock, soy sauce & honey and cook 100o for 10 mins on Reverse speed 1.
Add zucchini, beans & carrots. Cook 100o for 10 mins Reverse speed 1.
Thicken with cornflour mixture and cook 1 min more.
Tips/Hints:
Serve over rice. Vary the vegies using whatever you have on hand.

Georgie - mmm, this is great! Added a bit extra everything (except the sambal oelek - only used 1/2 tsp of that) so that there was enough for us & to send over to my friend. Thanks for a great recipe; I can see this becoming a favourite.
Update - did a tweak on this one tonight - sliced pork fillet instead of chicken, and broccoli & celery but no zucchini. Tastes great!

How much soy? Its not in the ingredients list. And do we add the chilli paste at the same time as the other liquids or did you add at the end to taste?

Oh also ginger isnt in the ingredients list. Damn have none, hope it still tastes yummo.

Sorry again Kali Ma - had notes everywhere and did a very poor job of getting them all together for this recipe. Think it is all there now. Shouldn't taste much different without the ginger but it would certainly add to the lovely flavours if you decide to do it another time.

This would probably freeze ok wouldn't it?
Am searching for a freezable tomato-free meal to make for a friend - how spicy does this one end up being?

I would think it would be quite suitable for freezing Georgie and as far as the spice goes, perfect for us but just cut down on the sambal oelek to 1/2 teaspn if your friend isn't into spicy. Gave my 87 year old Mum some leftovers the other day and she didn't complain about it being too spicy and I had used 1 tspn in that one.
