We have had our first full crop of Meyer Lemons.   I have been looking for different ways of preserving this beautiful fruit. I have been using my dehydrator lately so thought I would dry some lemons and then grind them into powder in the TMX.
I sliced 8 lemons as thin as possible,  and then dried them.  This took all day.  I ended up with 100g of powder.  It has an intense lemon flavor and could replace zest in a recipe. Could be added to meringues or cream in a sponge.  Shortbread biscuits or coconut biscuits.  Sugar could be added for an icing and i could go on and on.

NOTES
Make sure that you grind it as fine as possible,  to powder.
When used in cooking,  grind again with other dry ingredients. Example, with rice flour  to make Lemon Pepper,  add pepper later.

In custard,  grind with sug. And cornflour,  before adding milk and eggs.  ( to 500mls. Of milk,  need 4 teaspoons,  or more for a strong flavour.

Chookie...what's the difference with a Meyer lemon,  compared to I guess a regular lemon?

Maddy,  they are not as' lemony,'  if that makes sense.  You could easily sub any citrus fruit in this recipe.
We can't grow real lemons or oranges easily because it is so cold here.

Chookie this looks amazing. We had a Meyer lemon at our other house and it was wonderful. The one we have here is a dwarf and isn't as good, but it is covered in blossom at the moment.

This is a great idea Chookie, so easy to use and so many uses.  Added to pepper to make lemon pepper.

Chookie thanks. My olds next door have a meyer lemon tree, when it fruits we get weekly supplies, shoudnt be too far away it was flowering last week. I love meyer lemons, so much better than normal lemons & so juicy.

i dont have dehydrator ,i going to dry them in the sun. it may take a few days or maybe afew weeks  ;D

Did you leave the seeds in Chookie?  It looks like Uni has taken her seeds out.  How much of a difference do you think this would make to the end taste?

some seed are still there i sliced the lemons  on an electric slicer thats why u cant see them

Marina,  depends on how many seeds are in the lemons.  Some have lots ,  some a few.

the oven worked really well ACW i only sliced 1 lemon yesterday thinking it would not work  i have 3  more sliced lemons in the oven now

Uni, these look great.  Let us know how they go in the TMX.
My slicer isn't one of those beautiful machines that I see in the Italian Shops in Melb.  We bought it at a country market.  Second hand.  Still it does the job.

i have a second hand one 2 and like u said it does the job

while i think  of it i sliced some sourdough bread to make crostini omg we could not eat it it went very very hard do u know why that would happen ?

No,  I don't.  We eat most of our Sour Dough bread toasted.

This is a great idea Chookie.  A few months ago I made lemon powder by drying the grated zest of lemons to then grind to powder. (to make lemon pepper).  As you can imagine it took quite a few lemons and didn't make much powder.  Using the whole lemon appeals to me.  I will try this, thanks for posting.  :D

Chookie, I have dried orange rind and pulverised it in the TM to use in cooking -it's concentrated flavour is just divine.  Must give lemon rind a go now, too!  :)

JD i can tell you the temp was at 125 but not for how long sorry

they are not complete dry yet, ACW said  to put them in the for a little while, to help them along.

will pop them back in the oven tonight and blizt in the morning

Hi, I have just caught up with this thread, GREAT.  I have heaps of Meyer Lemons and the dehydrator is still out from making Tenina's chicken stock powder, i will have this on tonight.  I LOVE this forum and the ever surprising idea that arise.

Uni, I have had my dehydrator for about 20 years, I love it, sometimes I forget I have it but once it is out, usually in summer I love making dried fruits in it.   Rock melon and watermelon, they take a bit of drying but they are delicious snacks when dried.  I have also dried slices of cumquat's and dipped them in chocolate.....hummmm.   You would get a lot of use out of one.

The lemons are on.  5 trays I used about 12 lemons, the last four I just used the zest. Hoping for a concentrated flavoured powder.

Had oven on for over 12hours on 50 degrees. Almost nothing is dry - at least it's not burnt. Have upped the temp to 100 and see how it goes.

I have sliced some seville oranges and put in the dehydrator.  I don't know how they will go, probably be too bitter but we will see.

The seville oranges are finished and dusted.  Haven't worked out yet what I will use it in.  Very sharp flavour.

I added a generous amount to a Bill Granger biscuit recipe in place of a zest.  very nice ,  I added about a tablespoon full.  Will post recipe when I have a chance. ;D

This worked a treat Chookie.  After milling down as much as I could in the TM, I put them through my spice grinder which turned it into silky powder.  I'm thinking of keeping most of it in the freezer to prolong the flavour.  Thanks for thinking of this Chookie.  :D

What a shame CP.  I dried them in my dehydrator on 50C, they were still yellow at the end of drying. I think the oven is too warm with certain things.  :(

I had chump chops for dinner last night and I made a rub of Rosemary, Lemon dust, salt and pepper, let them sit for about half an hour before I cooked them.   Very nice.

CP,  if you have a window that the sun come in,  you could put them on a wire rack and try drying them like this.  May take a few days,  but this is how they used to dry the vine fruit in northern Vic.

I bought a box of lemons from Harris Farm on special . . now I need to do something with them quickly after giving lots away . . .  . .(I think I need a minder!! :-))) 

I'm guessing that they're not organically grown so I'm wondering if I slice them,  take the rind off and then dry the fleshy bit and then put them in the dehydrator, if that would work.  would probably need the rind for an extra zing in the taste . . .

Would appreciate any thoughts on this . . :D
