As a few of you would know, I have a little obsession with Bakerella's cake pops.
Well I have been trying quite a few combinations, but the whole cooking the cake/cooling/processing/shaping/chilling......and on and on it goes....I wanted to find a quick and easy way.

Thought I'd share this,  which the basic recipe that came with the cutest cupcake molds, for making cake pops (and just wish it was my invention!)

OREO COOKIE POPS/BITES

300g   Oreo’s (comes in a twin pack 300g or 2 x single 150g packets)
100g   cubed Cream Cheese (softened & at room temperature) full fat is probably best to ensure they adhere to the stick

Place the full 300g of Oreo’s into  *:, and process for 15 seconds, speed 5 or until you have fine crumbs.
Add in the cubed/soft cream cheese, and program 2 minutes & 30 seconds on  :: speed.
The mix will combine together similar to dough.

 Using a heaped Tablespoon amount (if using the cupcake pop mold), roll into balls and place on a tray with greaseproof paper, and pop into the fridge to chill for at least 20-30 minutes.

Once cooled, place into cupcake mold, squeeze shut and wipe away excess from edge of mold.

Gently remove the cake from the base of mold, and tap base gently on a flat surface (to help with a flat bottom shape) and place in the fridge to chill well, in readiness for dipping in chocolate & decorating.

Of course you don't need a mold.....just leave in ball shape or whatever shape you choose.

A plastic egg container (like lock & lock), is great for transporting the pop bites, or letting the base of cake pops set.

Any left over chocolate can be poured into a silicone muffin tray, set then pop and store in airtight container for the next time (as long as there are no crumbs).

Maddy - I'm not really sure about freezing them. My only concern with freezing them before dipping, would be maybe excess moisture, which will spell disaster for dipping in the chocolate. I know I have rolled them up and left in the fridge for a couple of days, before dipping....and they were fine. Or this last lot, I finished them completely then have stored them in an airtight container in the fridge.  You would just need to let them sit out a little before eating.....so no one breaks a tooth.
Using a packet of Arnotts mint slice biscuits & 40-50g cream cheese is really lovely too (my fave so far)

johnro - thanks to the instructions I made this for an end of year treat for one of my classes but was lazy and left the mixture as a ball, used melted white choc, some slithers of spearmint leave lollies and some glazed cherries to produce a mini Christmas pudding - students loved them and they were more popular than the pudding using left over fruitcake.

RoxyS - I made Granny Cookie Pops - I started out intending to make teapots but found it way too fiddly so ended up with these, which I am quite happy with. I used a couple of 500g blocks of butter to put my sticks in for putting the pops in the fridge to set them as I didn't have any polystyrene. Also found that because of the heat I had to keep popping the rolled up "pops" back into the freezer to keep them going too soft as they kept falling off the sticks. Once I got that sorted it was fairly easy going.

BellaBear - I borrowed your idea and made them into little Christmas puddings for my daughter's Christmas concert tonight.  I just half dipped them in white chocolate and then let turned them immediately back over so the chocolate would run a bit.  The "holly" is made out of partially melted chocolate, shaped and painted and then stuck on with melted white chocolate.  I'm really proud of them for a first attempt. Thanks for the recipe!!

LeeJ - I love these although I often eat more mix then I make balls. A tip for the Christmas puddings is to buy spearmint leaves for the leaves, and jaffas halved for the holly.

JanineRK - I made these yesterday and decorated them as plum puddings (like BellaBear's) - they were SO yummy and a HUGE hit at the Christmas party we went too - thanks so much for sharing.

Cookie - I love these. The decoration isn't anything marvellous, maybe next time.

KarenH - Made these tonight for the first time, and had some difficulty with the moulding step. When I came to dipping them, I used the Nestle Melts (dark choc and white choc) and just melted the choc in the microwave.  The mixture seemed very thick and gluggy, and seemed to "congeal" on the cake pop, rather than coat it nicely and smoothly.  Any tips on how to get the choc a bit thinner and smoother? Having said all that - while each cake pop is far from perfect if you inspect them closely, en masse they look quite spectacular!  

maddy - Karen, just make the balls bigger, before putting in the moulds.  I make them about a heaped Tbsp. amount.  You will get excess mix ooze out, but that means the mould has filled correctly, and you will get that lovely cupcake shape.   Keep the excess, and add it to another ball if on the small size.  You'll get the hang of it. I also only take 2 out of the fridge at one time, as the chocolate balls stay firm enough for shaping.  If you take the whole plate out, they may get too warm and soft to mould into the cupcake shape.
As for the chocolate, I too use nestle melts.  Melt gradually on 50% power.  I then add to it 1-2 Tablespoons of melted copha.  Now what I think makes the dipping really easy and gives the chocolate a good dipping consistency, is using a little electric fondue pot.
It keeps the chocolate warm, and a nice runny enough consistency.  K-mart sell them too for around $12 (on special) - $19.00.  I first melt the chocolate in the microwave then transfer it into this fondue pot.  Any excess chocolate I have left over, I then pour into silicone cupcake moulds, chill and store in an airtight container for next time.  You just need to make sure that there is no crumbs in the chocolate. Alternatively, the chocolate will thicken up as it cools down, so give it periodic bursts in the microwave (at 50% power) and a good stir, to re-heat and keep thin enough for dipping. Hope that helps you.

KerrynN - Well the Puffle Pop Cakes were a success! For those of you who don't know, Puffles are the pets of the penguins that live on Disney's Club Penguin.  I used coloured coconut for their hair, and coloured white Nestle chocolate melts using powdered colouring for the bodies. For the sticks, I got some balloon sticks from Spotlight and DH cut them in half. Mini marshmallows for the mouths and eyes. I used feed corn (left over from another craft activity) to stand them up in. Worked OK but as soon as one moved the others close by tended to shuffle about too, so I would try something else next time. Oh and they tasted good too.

Denzelmum - Made this, no cake - just Cookie Pops.  Decided to make plain ball and heart shape (using IKEA silicone mold).  Big hit for the party.  My only issue I didn't put them properly on the vase so can't balance and make it standing nicely.  Ended up put most of them in the tray, but everyone really enjoy it. Maybe next time using TimTam instead of Oreo.

Moo2 - Oh Maddy! The mint slice ones!  We love them and I haven't even coated them yet. Will definitely have to make another couple of batches for Xmas as these ones are not going to last past tomorrow!

johnro - I made 2 batches yesterday - one with white tim tams with a handful of cranberries thrown in with the biscuits as well as the mint slice variety into which I put some pistachios.

maddy - I bought Speculaas (Dutch spiced biscuit) the other day, so I will make some balls with them.  I think the spice flavour will be perfect with the chocolate, and for Christmas. I do still favour mint slice, though tim tams are very popular too.

keiramax - Always an inspiration Maddy thanks for sharing.  I've attached my attempts at clown pops for my DS 1st birthday.  I couldn't make them the same so made the decision to make each one different.

KimmyH - Here's my first attempt at cake pops. I used some leftover Bimby choc cake I had in the freezer and cream cheese. The taste isn't as wow as Oreos would be but a good use of cake off cuts. Made a bouquet for a friends birthday then played around with decorations for the children. Thanks Maddy for the recipe and tips.

Amy - My first attempt at these.... maybe in 20 years mine will look as good as Maddy's. To be fair I was in a big hurry, was trying to dip and decorate them 30 minutes before I was supposed to be at the party. I did tim tams for plain chocolate and mint slices for choc mint.

Thanks maddy, those instructions are going to make it so much easier for me when I do mine.  The philly you used - that is the one in the block?  Low fat or full fat - does it make a difference to the setting capabilities?

Yes, I  just used the full fat block of c/c.  I don't think  using lite cheese  would effect it at all  ???
Would be interested to see.  The only possibility is it may be more softer, which could cause problems for dipping (if using a stick)....eg. the cake falling off the stick when dipping  :P

Maddy I am inspired. I read in the paper this morning that Cake Pops are taking over from cup cakes and macarons as the new 'in' thing. Are they only for little girls or is it something everyone is enjoying? You can see I am behind the times re this.

Thanks for this Maddy, timing is perfect. We are expecting high 30º next week and I have DD's 6th b'day party next weekend so was wanting to make some cake pops but was thinking I didn't want to put the oven on so these will be perfect. I have bought lower fat Philly cheese so will let you know how they go. Can you freeze them, do you think?  If so, would you freeze them before or after you dip them in the chocolate?

Thanks for the feedback Maddy. I will probably make them a couple of days before and just store them in the fridge as you say. Will try and remember to take photos. Your photos are great. I am making them for a Pink & Purple Picnic party so have to think of ways to decorate them. Liked the look of the cup & saucer ones that Bakerella had done.

These are truly amazing! You're so clever.  I love them.  I might have to add them to my Christmas wish list. (It keeps growing!!!)  :D My poor husband never knows what I'm going to ask for next.

I noticed they have sold out at the moment, but I'm  sure they'll come back again soon.
If you don't have the mold, you can make them Bakerella's way.
Here is her instructions:

Begin to shape into cupcakes using a small flower-shaped cookie cutter. (see below) Take the chilled ball and roll it into more of an oval and then slide into cookie cutter. Push it into cutter until about half fills the cutter and the rest sticks out of the top in the shape of a mound. Then push the shaped cupcake carefully out of the cookie cutter from the bottom. Set right side up on a wax paper covered cookie sheet. Continue with remaining balls.

Once shaped, cover and return to freezer. (5-10 minutes)
TIP: You can leave them covered in the refrigerator overnight if you want to do the dipping on the following day.

Then proceed with the dipping process

That looks pretty easy maddy - the cookie cutters are readily available in home shops and much cheaper than the molds & postage. 

Trawling through my Christmas folder last night I found a couple of items I have made in the past (Christmas truffles using fruit mince & Choc-mint truffles) which I think would be quite suitable for these little cupcake molds. They are both rolled into balls, set in the fridge to harden up then dipped in chocolate so I am going to give them a go.  Maybe the taste is more an adult taste but I know more adults than kids so will give it a go.

They are more fiddly, time consuming and harder to get them all same.
Personally, the mold was money well spent  IMO  ;)  so quick and easy......that's the reason why the Mum invented it.....clever woman!   8)

Maddy, where do you buy edible glitter - it sounds fabulous? Hope it is something I can get in Kalgoorlie. Will check back tomorrow as M&D are heading up here from Perth so may be able to bring some if I can let them know where to get it. Thanks for the info. Also be interested to know where to get the sticks too. Have a place in town that might sell them but will be interested to know where you source yours from.

Hi willowfox & roxy......the sticks can be purchased at spotlight or cake decorating stores, but you will pay more for less.
I have been purchasing them through ebay, much cheaper.
I use the 6 inch paper lollipop sticks.  You can use cookie sticks, but they are thicker, and will pay more for them.

Edible glitter
Also bought at spotlight/cake deco stores, and there are many available through ebay and online stores.
I like to use one called rainbow dust.....it's silver hologram colour, and reflects so many pretty colours.

Glitters are great for cupcakes as well.  There's so many colours available, you can go glitter mad!  ;D

Thanks Maddy. I forgot to check in earlier so have missed the chance to get mum to buy me the glitter. Have to get a supply for next time. Saw some coloured plastic sticks like you would use for cheese and nibblies at a $2 type shop today so might give those a go for this time round - come in a pack of 30 so interesting to see if any get broken.

Re: the butter.....very ingenious!

Did you use plastic sticks?....that would also be the reason for them slipping off too.
I usually take 3 out of the fridge at a time for dipping, for that reason as well.

No, Maddy I used the bamboo half kebab sticks that I was able to get at Coles.

The party is tomorrow and my idea is to put the cake pop sticks into 2 marshmallows with musk lifesavers up the stick and then put them into an icecream cone filled with coloured popcorn. Will be leaving the cakes in the car fridge until just before they are needed and then popping them into the cones. Will take another photo. It is a picnic party so thought this was an easy way of handing them out and the lolly part of the eats out.

I borrowed your idea and made them into little Christmas puddings for my daughter's Christmas concert tonight.  I just half dipped them in white chocolate and then let turned them immediately back over so the chocolate would run a bit.  The "holly" is made out of partially melted chocolate, shaped and painted and then stuck on with melted white chocolate.  I'm really proud of them for a first attempt.

Reading your post Cookie brought back memories of using Glace Angelica when I was at school to make leaves for decoration on cakes.We use to nibble at it when the teacher wasn't looking. :-))  ; :D

DD had trouble unmolding the oreo filling from the cupcake mold Maddy and she is wondering if that was because she used low fat philly.  Ended up rolling them into balls, enough for the amount of children there, and decorating the birthday cake with them.

I would say because you had high heat today, they probably got a little too warm to unmould successfully.  You really need to take a couple out balls out of the fridge at a time, then mould them.  It is a pain going backwards and forwards, but it does work better  ;)
Did she do that? or did she take the whole lot out of fridge at once?  That would probably be the reason.
I made more today (jaffa ones), and didn't have that issue.

I'm not sure maddy, will have to check with her.  It was her first attempt and she doesn't get on here much to see all your beautiful work and instructions.  I liked the way she decorated the satay sticks with curling ribbon - she said it was really easy to do.  I'm on DH's computer and it was my first attempt at putting a picture onto the forum - different machine so I had a bit of trouble getting the picture bigger unfortunately.

Seriously, thanks maddy. The only cake pops I'd seen were ones that used cake and buttercream icing mixed together. I like the idea of cream cheese. Can you mix cream cheese with cake as well as oreos do you think?

Absolutely.  The cake/icing combo can get sickly sweet, especially with a chocolate coating, so cream cheese is a better alternative.
You will have to store them in fridge if not being consumed for a period of time.

Did you buy the cupcake mould?   I couldn't tell if Mutly the dog is pulling my leg  :D    I do love that little jiggy!

They just wanted to grab the cake pops CC and they are the perfect size for little kids. Although they like the concept of a birthday cake, not too many really want to eat it so DD was going to turn the cake itself into individual trifles - now that's something they will eat so at least the cake didn't go to waste. :-))

Oreos used to be dairy free - I'm not sure if they still are, but if they are you could make these with Toffutti "Better Than Cream Cheese" for a vegan / dairy free option.

I've decided to give these a go. DD is having  a mob here Wednesday evening so I thought she could try them on them. Just a few dumb questions.  I'm sure it's mentioned somewhere but I couldn't see it.
Making the cake pop is no drama. After they are chilled do I coat the entire thing with chocolate and then 'ice and decorate it'?
Or do you only coat the top in white chocolate and then decorate it?

You can do either Cookie.
Submerge the whole lot in choc then decorate the top, or dip the bottom first - set - then different colour on top......or simply just dip the tops.
It really depends on what you could be bothered doing at the time  ;)  Sometimes I just keep it in a ball shape, and plonk the lot in then sprinkle it  it  ;D

Cookie, using a packet of Arnotts mint slice biscuits & 40-50g cream cheese is really lovely too (my fave so far)

Made these tonight for the first time, and had some difficulty - so I thought I might ask the experts for some tips!  Firstly, when I put the balls into the cake pop mould, one of the sides came out OK and the other one looked flat and didnt have the same "ridges" and marks that the mould had, and also there was a kind of ridge thing where the 2 sides of the mould should meet, and the left over cake squeezed through.  So I obviously need more practice putting the dough into the mould - maybe the balls were too big or too small  ??? ???

When I came to dipping them, I used the Nestle Melts (dark choc and white choc) and just melted the choc in the microwave.  The mixture seemed very thick and gluggy, and seemed to "congeal" on the cake pop, rather than coat it nicely and smoothly.  Any tips on how to get the choc a bit thinner and smoother?

Having said all that - while each cake pop is far from perfect if you inspect them closely, en masse they look quite spectacular! 

I am looking forward to trying them again with some tweaks, and getting much better at them before DS1's birthday in April  ;D

Karen, just make the balls bigger, before putting in the moulds.  I make them about a heaped Tbsp. amount.  You will get excess mix ooze out, but that means the mould has filled correctly, and you will get that lovely cupcake shape.   Keep the excess, and add it to another ball if on the small size.  You'll get the hang of it  ;) I also only take 2 out of the fridge at one time, as the chocolate balls stay firm enough for shaping.  If you take the whole plate out, they may get too warm and soft to mould into the cupcake shape.

As for the chocolate, I too use nestle melts.  Melt gradually on 50% power.  I then add to it 1-2 Tablespoons of melted copha.  Now what I think makes the dipping really easy and gives the chocolate a good dipping consistency, is using a little electric fondue pot

It keeps the chocolate warm, and a nice runny enough consistency.  K-mart sell them too for around $12 (on special) - $19.00.  Also can get online at POK:  https://www.petersofkensington.com.au/Product/ProductInfo.aspx?id=1650942&cid=488
I first melt the chocolate in the microwave, then transfer it into this fondue pot.  Any excess chocolate I have left over, I then pour into silicone cupcake moulds, chill and store in an airtight container for next time.  You just need to make sure that there is no crumbs in the chocolate.

Alternatively, the chocolate will thicken up as it cools down, so give it periodic bursts in the microwave (at 50% power) and a good stir, to re-heat and keep thin enough for dipping.

I took my first batch to work (thinking them failures, and the "seagulls" there eat most anything  ;)) and got rave reviews anyway  ;D

They certainly are fun to do, and I can see that it would be addictive playing around with them!

By the way maddie - where do you get your coloured candy coating from?  I cant seem to find it in the supermarkets here .......

They don't stock them.  You'll find them at cake decorating stores/supplies, and I know spotlight sell them too.
Your best to look online for them, as I have found them to be cheaper that way.
You can also just colour white choc melts with powdered candy(chocolate) oil based powdered colourants.

Hi all,
I am planning on making these with the Oreo mix for my DS' 6th birthday next Thursday. I want to decorate them as Puffles (from Club Penguin http://clubpenguin.com/) as he is having a Club Penguin party. I have a few questions. I would do a practice run but as we are trying really hard to not eat too much naughty stuff I don't think it would be a good idea...

The plan was to make and decorate them on Tuesday and keep them in the fridge. From reading all of the other posts I assume this would be OK?

Puffles come in multiple colours and have spiky hair. I had white Nestle melts and was going to colour it with Queens liquid colouring but am wondering if there is a better idea?

Also, I was going to use the smaller bamboo skewers which I see others have done, but I wanted to check if this worked out OK or if I should make the effort of getting "proper" lolly pop sticks?

KerrynN I could be wrong, but I was under the impressions that the Queens liquid colouring would seize the chocolate and that you need to use a powder. Hopefully someone can confirm this either way so Tuesday goes as smoothly as possible for you  :)

From what I understand, the normal Queens food colouring is water-based, and wont mix properly with the chocolate,  Apparently cake decorating shops sell a powder for colouring chocolate which is oil-based and mixes in well.  Alternatively, you you can get pre-coloured candy melts, which are just like coloured choc melts - again from cake decorating shops or Spotlight.

Yep, Karens right.  Queens colour will seize the choc.
As an alternative, you can make a royal icing, and pipe that for spiky hair and let set (then you can use the water based colouring).
Re bamboo sticks......it may work, but it won't be as stable on the skewers, like the thicker lolly pop sticks.  Try dipping the skewer in melted choc first, then insert into cake and let set.

Well the Puffle Pop Cakes were a success! For those of you who don't know, Puffles are the pets of the penguins that live on Disney's Club Penguin.  The look like this:

I used coloured coconut for their hair, and coloured white Nestle chocolate melts using powdered colouring for the bodies. For the sticks, I got some balloon sticks from Spotlight and DH cut them in half. Mini marshmallows for the mouths and eyes. I used feed corn (left over from another craft activity) to stand them up in. Worked OK but as soon as one moved the others close by tended to shuffle about too, so I would try something else next time. Oh and they tasted good too.

Made this for DD's 6birthday, no cake - just Cookie Pops.  She even helped to make and decorate.  Decided to make plain ball and heart shape (using IKEA silicone mold).  Big hit for the party.  My only issue I didn't put them properly on the vase so can't balance and make it standing nicely.  Ended up put most of them in the tray, but everyone really enjoy it.

Maybe next time using TimTam instead of Oreo..

I did indulge a little  :P with buying a cake pop stand.
I have been asking hubby for.....forever.....just to drill some holes in some wood, so I have a good sturdy stand.
Well.....waited too long, and found this perfect acrylic (ridiculously priced and huge postage  :P) from ebay.

Oh no.....they're not my cake pops.....they were the photo on the ebay picture  8)
Love the colours though.  They have used fondant in a silicone mould to get the flowers.....it is very pretty I think.
My stand arrived today, but  I plan to use it soon  ;)

Very pretty presentation!  I'm pretty sure this is reusable.

Maddy - what about biscuit without cream, say granita or Nice, does it work well to for this?

Any biscuit you would like the eat works D/Mum......and you don't need to use cream cheese either.
Originally cake pops are made with crumbled cake, and butter icing (flavoured or plain)
It's just a matter of experimenting and combining what you like.
I like using biscuits as it's quicker then cooking the cake first, then crumbling it etc.

But the biscuits taste sooooo....... much nicer than the cake crumbs - I used this recipe at Xmas for mini Xmas pudds - melted white choc and mint leaves and raspberries (the lolly variety) as the custard, holly and berries - for my students instead of the traditional fruit cake and they all loved them.  Have to wait until Christmas 2011 for pics though!  :D  :D

I have to agree with you Cookie.  Tonight I thawed out some carrot cake with cream cheese frosting and make 6 pops in my cupcake mould and although they taste OK, I don't think the kids will like them as much as a biscuit filling.  I had so much trouble melting both the brown and white chocolate tonight and they simply are not worth taking a photo of.

How do you melt your chocolate Judy?
I am having success by melting the nestle melts on 50% power for 1 min., then stir with a knife, then give 10 second bursts (50% power), until the chocolate is almost all runny.  I then tip it into my electric fondue pot, add 2-3 Tbsp. melted copha, good stir.....then it's perfect dipping consistency.
I do prefer using biscuits (choc mint slice being my fave!), and I think the firmer consistency stands up well for inserting the sticks and dipping.

I can't wait to show you what I did for a Mothers Day treat.....using the stand  :)......but photobucket is having issues and I can't upload my photos yet >:(
My Mum was thrilled!......and the stand I think was worth every cent  ;)

Maddy, I melted the chocolate this time in the microwave (usually do it in the TMX without any problems) at 50% - sort of like what you said but I add coconut oil to it instead of copha.  Maybe I did it a tad too long though as it didn't do what it usually does.  Not a problem, no one knew I was making them and in the end I forgot to take them  and the bottle of liqueur I made for DD anyway.

From "House" kitchenware.  If your careful unwrapping them, you can re-use them.  You can also buy other gorgeous designs  on the net.

Same here - I made 2 batches yesterday - one with white tim tams with a handful of cranberries thrown in with the biscuits as well as the mint slice variety into which I put some pistachioes. (http://www.animated-gifs.eu/emoticons-christmas/0003.gif)

I bought Speculaas (Dutch spiced biscuit) the other day, so I will make some balls with them.  I think the spice flavour will be perfect with the chocolate, and for Christmas.

I do still favour  mint slice, though tim tams are very popular too.

This time using TimTam.  Not sure what's wrong with my Nestle white melt, didn't melt properly but run out of time, so just decorate straight without melting choc. Made for friend's daughter 6th birthday.  She's happy and the kids are happy, no reason to complain  ;)

I have used the white chocolate once for dipping....I don't think it needs as much melting time from memory.....also, check expiry dates on packets....it does make a difference.

The nutcrackers & gingerbread men were in Bakerella's latest Christmas book.  I'm really pleased how they turned out, but good Lordy, those nutcrackers take some time! The chocolate moulds for hats, moustache & nose were sourced from U.S....so I'm not even going to break down the cost of them per pop  :P but so far they have been my favourite to make.

I used Parkers mini pretzels for the antlers, using the star shaped pretzel.....and trimmed them with scissors to get the antler shapes.

Here's my first attempt at cake pops. I used some leftover Bimby choc cake I had in the freezer and cream cheese. The taste isn't as wow as Oreos would be but a good use of cake off cuts. Made a bouquet for a friends birthday then played around with decorations for the children. Thanks Maddy for the recipe and tips :)

just thought I'd mention, Kmart had the electric fondue pots on clearance for $3 here, not sure if its the same in all stores  ???.....I found it makes chocolate dipping SOOO much easier.

Yes he is very proud of his effort. Even sanded and stained it for me. Sadly holes are too close and the pops touch each other. Might need to make another!! He originally made it for my lazy Oreo pops (one whole biscuit dipped in chocolate see below). Thanks for fondue tip, off to Kmart to check it out.
