Thanks Cookie.  Mine is darker too Ruth so obviously the flash does affect the colour.

Oh, yum - this is sooooo delicious!!!  I froze the strawberries so it would be thick and cold, and we LOVED it!  Thanks Ruth!  ;D

Thanks ruth.  It is amazing how well avocados do in desserts.  I didn't see all of Masterchef but recall  Skye? doing a chocolate and avo dessert (hopefully I am not making it up!)

There is an avocado and ginger ice-cream here somewhere

I would think it would be great on your blog Jo. Great idea about the freezing. I am so not creative, hence why I come here ;-)

I never watched masterchef (yes perhaps the only person in the world not to see an episode) but I will check out the icecream.  The raw book has a chocolate avocado desert but I have not tried it yet.

I'm sure you're right Thermomixer - it was Skye, and quite early on in the competition from memory.  Avocado, agave, cocoa and coconut oil???

This is super yummy!  I cheated and didn't soak the dates and just mixed together on a higher speed for a little longer.  I liked the little nuggets of date throughout.  Certainly not as smooth as intended, but absolutely delicious.

This would be great in kids lunch boxes for morning tea.  I guess the avocado would go brown so the colour might be off a bit.  I'll have to try and keep some aside for a few hours next time to see if it still looks nice.

Made a version of this last night with 2 small avocadoes, 1 banana, 1 punnet of strawberries.  Result was amazing!  The texture was a beautiful, fluffy, airy mousse and I loved the flavour.

I managed to save some last night, and by morning tea this morning, the colour was still really nice, and still tasted great.  DD gobbled it up.  So yes, I think this would be great in a school lunchbox.  Perhaps frozen to keep contents cool, and by morning tea it should be defrosted just nicely.

Soaking my dates now for this, but my kids ate my strawberries lol. Would blueberries work instead do you think?
