Title: Super easy cream cheese icing

OK so all cream cheese icings are pretty easy but I just did this one as i had limited time.

The recipe was

500g cream cheese
500g icing
1 tsp vanilla

All in to  *: and mix for as long 30sec on spd 6 scraping sides as necessary.  I left mine beating as I did other things.  So around 1 min.

Note:

I did 1/4 of that recipe and it was HEAPS for a 20cm square cake.  Heaps. 
It would adapt well to lemon or other flavouring as was not too sweet.
I used Spreadable cream cheese and not sure if it will set, is quite runny.  So would advise to use the normal one.

Thanks for that. I've found that the low fat cream cheeses always seem runnier than the normal.

the low fat cream cheese has some ricotta in it (to reduce the fat content) and that is why it is runnier - something I have learnt since I became a consultant  :)

I guess you could put in a bit of dissolved gelatine to make sure it set.

I just thought I should update this.  While it hasn't set, it hasn't run off the cake or anything.  So it's all good.

Thanks always great to have recipes like this. 

Maybe just a bit more icing sugar if it seems runny.

I like lemon juice in it too.

Or some butter make it less runny though also a bit more fat ;D
