I'm happy to use the black beans, it was delicious and I wouldn't want to change anything to alter the taste of what I cooked.
I used to order black bean something or other when we had a meal at a Chinese restaurant so it was a safe option for me.

I use Tempeh from the fridge section in coles/woolies, these are fermented soy beans too. :-\
