Red Cabbage

I bought a red cabbage for something I wanted to make, but can't for the life of me remember what it was!  Does anyone have any ideas on how to use it up?  I don't want to make braised cabbage with apple as I've OD'd on it a bit.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Here's some recipes from your neck of the woods that I found when I was looking for what to do with a red cabbage. The first salad recipe looks great but no parsnips here ATM.

How about a red cabbage and beetroot borsch?   I made a braised red cabbage and beetroot dish at Christmas and the combination of the 2 flavours went really well.. Found this recipe which shouldn't be difficult to convert

I use 1/2 red & 1/2 white cabbage in my coleslaw.
