It’s so very kind of you ladies to try and help me with my food problems. I promise you that I will write all these ideas down so that I don’t have to refer to the links again - there’s more chance I will do things if I have them in a book I’ve started, hardly a day goes by that I don’t add something else to the book but so far there’s only 1 recipe I’d do again (a peanut butter fruit dip so not really food). I’m trying to do meals for 1 person when I do try something different (2 serves for me) so that I don’t waste as much as I have been doing.  It keeps me occupied finding these recipes and every now and then I try something different, when it doesn’t turn out I just go back to my scrambled eggs, pasta or soup again. Chookie I like the sound of the Asian sauce, my best meal out was a Chinese meal and they were kind enough to cook the veggies soft for me. I can and will try all your suggestions but don’t hold your breath for me to report back, this hot weather makes me even less hungry and not wanting to cook. Thankfully I can eat quite a few salad ingredients. Bless you for caring xx

It is absolutely my pleasure to jot down ideas that may appeal to you, Judy, and I hope you get some inspiration from any of the above. If I think of anything else I will let you know, although most of my meals are for two plus portions into the freezer, but I will keep you in mind.

Last night we had a sort of mini quiche. The base was cooked spaghetti, then you added chopped ham, and mixed eggs with some low fat cream and grated parmesan and poured over it. I cooked them in muffin tins. They were very tasty, and I had a couple for lunch with salad too.
May all dairy items in your fridge be of questionable vintage.

I whipped up a quick meal for tonight using one bundle of hot Ramen noodles with a peanut butter/Mirin/soy/chilli sauce based very roughly on this recipe which I made over a decade ago and not since. https://www.foodnetwork.com/recipes/food-network-kitchen/cold-peanut-soba-with-chicken-1973884. I originally saw a lady called Claire Robinson making the sauce only version on a Foxtel programme using only 5 ingredients. My notes on my typed recipe were positive back then but I was surprised that I really enjoyed it tonight as my taste buds have changed drastically these days. Cooked the noodles for 5 minutes and whisked the sauce ingredients whilst they cooked, there’s enough leftover to try it as a salad addition over the weekend.  Followed it up with custard and mango.

Home made hamburgers baked sweet potato and greens . Dessert the last of the Ice cream Plum Pudding.

 Judy, great to see you keep trying different recipes. The Asian type sauce made enough for 4 serves. I intend to use the leftover on veggies.
Cookie, they sound interesting.
Turkey and mushroom cottage pie tonight. Will make 4 serves and have the other 2 tomorrow, as it’s heating up again for the next few days. More mango fluff trifle. Can’t drink the grog but can certainly eat it.  ;D

BBQ sausages and steamed vegetables. Lucky they got anything, think I had/ have a migraine and the world was not a great place yesterday but feeling a lot better today . Thankfully DD did the late night paddock dinner run .

We are having a Curried Chicken Pie from Thermogroover tonight. I've been making her yoghurt for a while now and it is delicious, so I decided to try this recipe.
