Made my first sponge cake yesterday.  Think I need a lesson from Mab. The texture was a bit open, ( course). Will keep trying.

Thank you Cookie and Mab.  As light relief today , ( after having visitors yesterday) I will make another one today.  Mabs is basically the same ingredients as the one I made.  The difference being how the sugar is added. I just put the lot in at once. I think this may be the problem.

Your sponge looks fine Chookie.  My mum made the best sponges ever and even tho I use to use her recipe mine were never quite like hers.   Mum could never quite master the Ginger Fluff sponge where as I had no problems with it at all.  DD requested Nanna's sponge tins after she passed away and now makes them as good as mum did.  Maybe the secret was in her tins :) :)

The old tins were fantastic, I am glad I kept all of my Mums.. :D
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

I have Mum’s too.
A friend who lives in the bush makes lots of sponges for events. Her tins are well loved. After one particular event a snobby lady from the city asked for her address. When asked why, she replied that she would send her some new tins to replace her old ones. My friend declined. 😀😀

I used my Mum’s tins.  People are amazed when I say that I have never made a sponge.  The reason is that Mum made the best ones.  When I was working the maintenance men at the school often did me favours. I would ask Mum to make them a sponge for their morning tea. They loved them. Especially the Passionfruit ones.
Why I’m trying to make them now is that my hairdresser has asked for a ginger one for Xmas.

Well done Chookie the sponge looks great . My MIL friend makes the lightest sponges , every Easter she makes our family one with baby Easter eggs on top and little chickens with pastel icing . For my DH Birthday she makes one every year ! She sometimes freezes them too .

Friend brought a jar of burnt orange marmalade for me to taste test. Very interesting and different. We swap interesting recipes.  She cooks the oranges on the BBQ for the char.  I’m going to char some on the wood BBQ to add a smoky touch.  Could make interesting Xmas gifts.

Does it taste burnt Chookie? I can’t imagine that tasting nice but it must be otherwise your friend wouldn’t have given you a jar.
