Today I made Tenina's chicken stock powder and caramelised garlic paste. I'm very excited to use them, probably in the canned tomato soup in the next few days. :-)

I've been eating leftovers since DH went to hospital or grabbing some fruit to take with me but when I stopped off at Farmer Jo's on the way home today I picked up a huge bag of red capsicums (about 13) for $1 so tonight I have roasted and frozen most of them but I did make the capsicum jam from here as well.

You are amazing Judy!
I made pizzas for dinner tonight. One was a traditional base, and the other was a zucchini base from Jane Kennedy's book OMG! I Can Eat That. I have to say that my family really surprised me as they really enjoyed the zuchhini base, so I have just posted the recipe.
When I returned from my weekend away, I was informed that the biscuit container was empty, so whilst the oven was still hot I made Treat the Team biscuits from the forum. The mixture was a little wet, so I meant to add a tablespoon of chia seeds, but the lid was loose and a LOT of chia seeds fell in. Oops! I almost burnt them too - they are very crisp :o. They are kind of morish as they are not very sweet.
I also made a slice with some of the fruit mince that has been lurking in the fridge since Christmas.

I made some salmon and zucchini muffins from a recipe in Runner's World magazine.  I want to tweak the recipe a bit before I post it.
