My kitchen scissors are one of the most used utensils. I used them to cut the Duck when I was mangling it with the knife. I use 2 pairs. Heavy duty ones for dried fruit , herbs and trimming chicken, and a lighter pair for cutting baking paper and plastic.

Agree about the documents. I’ve found it handy to take a photo of the final documents.
Yesterday I attended the Probus Easter Fish Fry. It is the event of the year. We paid $25 and a local fish shop provided the fish and chips.  Salads and bread were made by the Probus ladies. As well as Pav and fruit salad. Also cakes to have with tea and coffee. They hired a local hall. I made Portuguese Custard Tarts. They had gifts for people who helped and a lucky dip. I got a voucher for a local restaurant, buy one get one free.

Soup made with the stock from the duck carcass. Garlic bread. Made with no Fuss bread sticks and homemade garlic butter. I add a little oil to the butter. Leftover slices toast up well.

Cookie, these look delicious.
I haven’t been able to post photos for ages. Very frustrating.
Making more Hot X Buns today. This will be my 3 rd lot. I have a large marble table out side and I have been doing the second rise on it , when it’s sunny.
Also more Mango and Tomato chutney.
GF Banana Cake . I use a cake mix as the base and add extras.

Cookie, when I over cook jam and it’s a bit too thick, I just add a bit of water or lemon juice and cook for a few minutes more. However it’s sometimes hard to tell until it sets up.

Thanks all for the Birthday wishes.
It’s fish and chips day at Probus.  I understand that it’s something that they all look forward to. I’m taking Portuguese Custard Tarts.
Made another lot of Hot X Buns yesterday. Had a friend come for a lesson.

Family and friends dinner last night to celebrate my Birthday was great. I’ve given many Birthday parties but never had one myself. I’ve had Birthday Seasons, with going out and shopping but never a full blown party. It was fun.

I bought 2 sets of glass containers with colour matched lids from Aldi. Very easy to clip lock.

Real Autumn now. I love this season. Judy, always a challenge to fit that bit extra in the freezer.
Taught a friend to make HotX Buns. Also the makings of Portuguese Custard Tarts for tomorrow.

Visitors for lunch. I’ve precooked most of lunch, eggplant dip, garlic bread, duck, mashed potatoes, gravy. Prepared veggies for last minute cooking. Made custard and pastry shells for Portuguese tarts will bake at last minute.
Yesterday I made Hot X Buns. I did mixing and first rise in bread machine. Pretty good. I think they didn’t rise quite as much as traditional method. I therefore gave them more time on second rise. This worked very well. With sweet buns , in Winter in our cold climate, I think this method will be very handy.

My first car required double de clutching. Great fun when you are young. Wouldn’t want to do it now.
