Depome, the one thing that I have learned about bread making is , each to his own method. Do what produces the best loaf for you. I love to experiment, and I do have a lot of failures . The chooks eat very well!!! , and I have a freezer full of bread crumbs. Today I cooked sour dough with oats. It is a lovely loaf so I took a photo and will post it tomorrow on my Blog. It is getting colder here but we haven't lit the wood fire yet so the second rise took 4 hours, instead of 1 1/2. to double. keep experimenting and have fun

Glad you like them JD. I usually chop the nuts by hand for a better texture. DH likes his a bit soft and chewy, I like mine crunchy. So I cook mine a bit more.

Meganjane I think it might be my Sour dough recipe that you want. It is called No knead, sour dough oat bread. I posted it last December under Bread. You need a starter and it makes a nice size loaf. I took a photo today and will post it on my Blog tomorrow.

Ceejay, you have inspired me to get the starter out of the fridge and make a loaf. I'm making the sour dough with rolled oats. You might like to try it. I posted the recipe ages ago. The poor starter hasn't been fed for over 2 weeks
