Title: Coffee Syrup for Iced Coffee

Two years ago I developed a recipe for Coffee Syrup.  The good members of Forum Thermomix offered some suggestions as to how I might improve the recipe. Today I made a batch of the Coffee and incorporated some of these suggestions.  This is the revised recipe incorporating the changes, the original recipe has been removed.

Infuse 1 1/2 cups of FINEground coffee of choice in 1 1/2 cups of boiling water,  for 10 minutes.
Add 1 cup of raw sugar to TMX bowl and after 10 minutes strain the infused coffee in on top of the sugar.  I used 4 layers of Chux.  After 10 minutes I squeezed hard, with my hands to remove as much liquid as possible.
Bring to the boil on Varoma temperature ans boil for 3 minutes, speed 1
Bottle into sterile bottle.  Makes 1 1/4 cups.
It will keep for 6 months.
You may add 1 teaspoon of Vanilla extract to bottle.

Add  1 1/2 tablespoons of the syrup to a large glass of milk,  topped up with ice cream.
OR
Add syrup, milk and ice blocks to TMX and zap.

Guess you could freeze it in ice-cube trays and use them as you need them Chookie.  Nice for summer.

I am going to do this.  Will I buy a packet of ground coffee or buy the beans and grind them in the TMX. Muchy muchy I guess.

I adore iced coffee in the hot weather. I've taken to making a shot of expresso on the machine and putting it in the TMX with ice cubes and I even bought skim milk (we usually have hi-lo) so I can have lots.

Chookie, I don't take sugar in my coffee so I could make your syrup  without it couldn't I?  But then it may not keep. I think I'll keep doing as now. (sorry, thinking via the screen)

Oh Yum! Thanks for that - I'm on here looking for lots of milk recipes - my cow, ClaraBell finally had her calf yesterday and we'll be in full milk production by the end of the week!  ;)

Tenina has a coffee version on the Brownie Milk recipe on the blog and I think it has more sugar than this one - not sure  ??? ??? will have to do the maths but I make it all the time along with the Brownie Milk and it can be dangerous  ;D ;D I don't think it is the sugar that preserves it Cookie, as it is a cooked syrup - I could be wrong!!!

Faffa, we have both the coffee and chocolate version of this syrup in the fridge at all times.  Much better than bought milk flavourings!

I'll try to resist making it because if I do I'll only consume it within a couple of days. Even with hi-lo milk that would be very naughty of me. :'(

I have just made a batch of this Chookie. I think I made the mistake of straining the coffee back into the TM bowl through a sieve instead of something finer like a chux-lined sieve as our first drink was very gritty (it had dregs like you find in the tray of a coffee machine).  So I added another 1/2 cup boiling water to the existing mixture so that it wasn't as thick and strained this lot through the chux. It was a perfect glass of iced coffee with the sweetness level being just right for us.  After a couple of large glasses each  ??? ??? I filled a 300ml bottle with the syrup and as it lasts a month, don't think I need to freeze any of this lot - I'm sure it will all be gone within the month. Best iced-coffee I've had in a long while and I am keeping this in mind for whenever I do a TMX hamper in the future. Thanks so much for the posting Chookie  :-* :-*

I've done it twice with instant, turned out fine, Susan! I made it again this morning, (did you see my FB post and it made you want it? lol) but it seems I can't stand much caffeine at all since I've cut right back and I didn't enjoy it. Ah well, DP can drink it. :)

An old post I know but summer is here...
Not sure what I did wrong - added a cup of boiling water to my 1 1/2 cups freshly ground coffee, and strained off only a trickle of water after the 10 mins
So added another cup of boilignwater - but should it have worked the first time? Assuming that I should have had roughly a cup of strained coffee for it to make 1.25 cups syrup?
Placenta brain??!!  ???

I love this in summer debetha.  I also had a bit of a problem with the straining of the liquid as you will see below in my comment on this thread.  So, what I do now is after the 10 minutes of standing time, I add another 1/2 cup of boiling water to the coffee mixture then strain this back into the bowl (using a chux lined sieve to keep the dregs out).

It could be that the coffee we use affects the outcome Chookie, how do you get on with only 1 cup of water in yours?

It is very very tasty though. Thanks for the input jd, that is basically what I did, including using a chux. Might be the grind of the coffee?Getting thru lots of milk here! Thanks for the recipe chookie!

I'm just remembering that Chookie has a coffee maker so hers may grind finer than the Harris Dark Roast Coarse Grind Plunger Coffee that I use. What did you use debetha?  Would this be the case Chookie and the reason why I need to add more boiling water than you?

We have a sunbeam grinder, used a mid setting but can easily adjust. Would worry that the sludge would get thru a  chux if too fine ( e chux I used seemed to have pretty large holes!)

So today, finer grind, 2 cups water, gave me 1.25 cups syrup.
First batch pretty much gone!!

As I thought debetha - it depends on the grind of the coffee beans, obviously finer is better.  I fold my chux over for better straining.

Just landed here from the brownie milk link and thought I would add my thoughts as they happen lol

You could try using coffee filters in a funnel to drain off the coffee.

These are relatively cheap to buy in packs - I use them for oil if I have been shallow frying the kids nuggets (Mr T's recipe). They aren't in there long and I just strain it off and use it next time. Keep it in a separate bottle  ;)

Hi, I just saw this thread and I am a bit excited about making it! I love iced coffee!

I have a very stupid question to ask before I go ahead and do it...the recipe says 1 1/2 cups of ground coffee. Does that mean actual coffee beans ground up? Only asking because it sounds like a lot! (so does it mean the coffee isn't diluted in water at that stage?)

Thanks for any help you can share! I'm going to try this!!! Tomorrow is going to be a warm day...I think an iced coffee will be perfect!  :)

Yes that's correct blackwood, I don't have a coffee machine so I just buy those already ground from the supermarket. You end up with a concentrated syrup which you top up with milk for an iced coffee.  Have a good read of all the comments in regard to straining it.

Chookie, I was just about to make this, I have a Delongi magnifica coffee machine, wondering if I made a cup and a half of extra strong coffee would it be strong  enough and should I then add it to the sugar or just make a sugar syrup, ?

I made this, using my memory for the ingredients ooops, and used instant coffee, same amount, and it is fantastic, maybe a bit stronger than with ground, but still really really good.

Surprisingly well cookie thanks but the a/c and fans are getting a good work out and I'm not doing anything that isn't necessary. No cooking either!
