Have been meaning to thank Maddy for this recipe for some time.  It is very flavoursome and works well with many types of sausages. I'm using a lovely Italian sausage that my local butcher makes at the moment.  My daughter hates risotto but enjoys this one :) Looking forward to dinner tonight!!!

Thanks for the inspiration - had no idea what to bake today (only knew that Christmas eating was definitely over and I needed to start baking again!!!!)
Am using this as a base - think you can pretty much substitute what you want in this one!!! Using part oat part quinoa flakes, 90gms of rapadura instead of normal sugar and adding chia seeds and linseeds!!! Sure it'll be yummo!!!!

I quit sugar for 9 mths in 2012 and had my ups and downs.  After 3 mths I no longer had sugar cravings which was fantastic however as soon as I introduced a little fructose - BANG, it was like opening up the door to all the naughties that I crave AKA chocolate.  I think if you have are going to do this eating plan then it needs to be a lifetime commitment as I feel as if all the hard work was for nothing.  I also don't think it's considered a "weight loss" plan, although many lose unwanted kilos (I lost a few, although thankfully didn't have too many kilos to lose), for me it was to be free of the hold that sugar has on my life.
In saying this, I managed to kick coffee (as i didn't like sugar free coffee  ;D, I realised it was only the sugar I was after) and I'm very careful with how much sugar my kids consume.  Before going sugar free we all ate, and still do, a fairly good diet.  We use rapadura and honey as sweetners, stay off the processed foods where possible and eat plenty of fruit and veg.  Water for the kids (the occasional glass of milk) and plain mineral water and tea for us adults (my hubby still drinks a coffee each day but sweetens with honey).
Anyway, enough of my ramblings, just thought I'd let you know how it worked for us.!!!!! There's a good forum out there too - can't think of the name of it??????

Thought I'd bump this for those who haven't tried it yet. We eat this salad on a regular basis. DD 7 and DD4 love it (I call it Princess salad) ;D  It really is delicious.  I must say though, I don't like it nearly as much without mint added.  A work of warning, be REALLY careful when blitzing this salad as lovely little chunks of beetroot turn into mush really quickly.  I cut the carrot up in small chunks and try to blitz once first as I always seem to have big chunks turn up in the bowl ??? ???

Have made this salad twice over the Christmas season and we all love it - so versatile and lends itself to other veggies lurking in the fridge  :o It really is a lovely dish!!

Just had to try these! Glad we did. The girls really are really enjoying them and have plenty to freeze (my muffin liners were HUGE but still managed 21 muffins  ;D).
LOVED Karen's idea of blitzing the rapadura (I try and use it wherever possible) first as I think the texture would have been lighter if I did this so will try it out next time.  I used coconut oil and it worked beautifully.

Thanks for this recipe. We had it for lunch. Cooked rice first and popped in thermoserver while the rest cooked.  Used speed 2 to avoid any sticking.  My thighs were cooked after 30 mins, placed greens in the top tray for the last 10 mins.  I didn't have any sweet potato so used a combination of potato and pumpkin.
We all enjoyed it  :)

Making this one now ;D How could I resist the beautiful picture!!!!!!
I soaked my sultanas in rum overnight and used half half tea and freshly squeezed oranges.  Replaced the sugar with 50gms of rapadura and cut the butter down to 125gms.
Will let you know how it turns out - MAY upload pictures but I'm sure mine won't look nearly as good!!!!!! ;D

Yes, I found it hard too Chookie, however I'd just eaten a rather large pizza so I guess my will power didn't have to work too hard ;D
I haven't given any to the kids yet - I actually forgot to mention that I added only 30gms of chia seeds as the taste can be quite strong.  I could really taste them in the first 1 or 2 bites but then all I could think of was how yummy it was.

Just made this as I had some roasted almonds blitzed that I needed used.  I used them instead of the walnuts. :)
I decided to use melt some chocolate to put on top (instead of icing sugar). Will look forward to one after dinner with a cuppa....or 2.

Thanks for all the tweaks to this recipe.  DD7 and I enjoyed this soup.  We added a touch of sour cream to our bowls of soup as I didn't have any cream/yoghurt and was careful not to add too much lemon juice.  I only used 3 medium sprigs of parsley and Ithink that was enough.  Will enjoy it over the next few days for lunch :)

I made it last night for my girls and we all enjoyed it.  A few alterations in keeping with what I had in the cupboard  ;D
400gm can of carnation lite coconut milk, potatoes and carrots instead of capsicium and then I realised that I didn't have any curry powder :-)) So I replaced that and the garam masala for 2 tabs of red curry paste - still delicious!!!!
So this is definitely a very versatile and forgiving recipe and one the kids seem to love!!!!

Well, just have this flan in the oven now and I can't wait to try it.
I cheated though  ;D
I was actually making mini quiches and had a sheet and a half of frozen shortcrust pastry left over and  a glut of apples in the fridge so I thought Apple Flan!!!! :D
The almond mixture took about 2 mins to make and I just peeled and cored the apples and didn't bother about stewing them so all in all it was super quick!!!!! ;D
Will get back to you with my cheat's verdict shortly.

Well just about to make another batch of this delicious fudge for our Easter conference at church - along with the cookies and cream fudge plus some "Naughty Rocky Road" which is DEVINE (Best Recipes website).  I hope I'm strong enough not to eat too much of it before it gets there!!!! :-)) ;D :o

I made this yesterday for my grandparents - was delicious!!!
I only cooked mine for 20mins as I always seem to burn the edges on my slices, I think you can get away with it on this slice as it doesn't matter if the middle is a little moist/fudgy  :)
Next time I'll do 1 1/2 batches as it only filled my tray 3/4's the way - this always happens when I make a slice??? :-\
