Salmon with ginger sauce and spiced cashews . Cookidoo. Very nice just cooked a little longer . Servered with brown rice . DS plate is overflowing with vegetables.. might have to hold back my mothering instincts.

Had a nice chat with the kitchen staff at Nolan’s Restaurant after our dinner. Complimented them on their sauces and dressings. Discussed their Sweets menu. Their Apple tart is divine. Their pastry chef wants a taste of my SD crumpets. Offer of a free desert and coffee if I’m prepared to share. Didn’t tell them I’d do it for nothing.

Nolan’s asked me to write a review. Did it.  They insisted that I take some Muffins home. I don’t particularly like muffins but tried 1/2 and it was nice. Loaded with Raspberries and Macadamia nuts.
I’m having a visitor for lunch Thursday so think I will heat one and serve with custard and Raspberries. The muffins are massive.

I found 2 trays of Turkey mince in the freezer. I decided to make nuggets.  I looked up Farfallinas recipe on the Forum for Chicken Cordon Blue and added a bit of my KFC spice mix. I used a medium sized ice cream scoop to form patties and made an egg, milk and flour wash plus a good bit of KFC powder. Then Panko crumbs. Shallowed fried briefly. Will AF them when needed. Made 25. Dinner tonight and the rest frozen.
I always fry a little of the mix before proceeding to test the balance of flavours.

Roast butterfly lamb with roast potatoes sweet potatoes pumpkin and carrots , steamed corn and broccoli. Found homemade mint sauce in fridge as well .

All the baking I did over Easter is coming in very handy. Visitors in and out and I just defrost and reheat.

We had pizza tonight. I had tried to make ricotta to make gnocchi but it flopped. It’s the first time that’s happened. It was a Tenina recipe.
May all dairy items in your fridge be of questionable vintage.

Snap. DH decided we would have fish and chips tonight. I don’t mind as I don’t have to cook. Just order them and go and pick them up.
