200g watercress (or rocket, or spinach, I guess)
50 g parmesan
50g almonds
juice 1 lemon
3 tbsp olive oil

Blitz together

Thanks ILB - I think a combo of watercress and spinach too - we have a soup of watercress * spinach on the menu with ricotta dumplings.
