Aileen Sforcina, author of Rainbow Recipes, has asked me to share this recipe with forum members. It will be published in her next book, details of which she will make available when the time comes.
Name of Recipe:Peppermint Carob Bites
Number of People:
Ingredients:
250g raw macadamia nuts
250g pitted dates
50g carob powder
10 drops of peppermint oil (peppermint essence will work but the oil is better)
Preparation:
Place all ingredients into the TM bowl and process for 1 min/speed 9 or until it is a sticky mass and nuts are no longer visible.
This will be an oily mixture as macadamia nuts have a high oil content.
Form the mixture into shapes and freeze.
Tips/Hints:
I use a silicon ice cube tray with heart shapes. I press the mixture into the heart shaped holes and then turn out and freeze each little carob heart in a flat container. If I layer the carob hearts I use plastic wrap between the layers and they don't stick together.
This is a delicious and healthy sweet treat to finish a meal. They've received a great rave review from my friends and Thermomix customers.

WOW thanks judydawn for a lipsmacko recipe. Carob is good for Diabetics isn't it? I have a Santa ice cube tray so I know what I'll be doing now hehehe.
