Title: Coconut Prawns with Mango Sauce

Name of Recipe:  Coconut Prawns with Mango Sauce
Number of People:  MMMM depends they really are very morish; there's 2 adults and 3 kids here and it was a struggle
Ingredients: 

Coconut Prawns:  1kg of large uncooked prawns, Roughly 1 cup of cornflour, 2 egg whites lightly beaten, 140g Shredded coconut

Mango Sauce ingredients: 425g can of mango slices, 2 tbsp mayonnaise, 2 tbsp mango chutney


Preparation:
MANGO SAUCE:
Place all ingredients in the tmx and mix on speed 5 - 6 for a few seconds until there are no lumps. 

PRAWNS:
Peel the prawns, removing the head but leave the tails on. Dip the prawns in the cornflour and shake away any excess. Then dip the prawns in the egg white and then in the shredded coconut.

Deep fry in oil of choice (the oil will need to be thrown away afterwards so don't spoil the oil in a very large deep fryer if you have one, maybe use a saucepan with a smaller amount of oil ?). The oil needs to be quite hot, they should cook quite quickly, and cook until golden.

Tips/Hints:  If you're from Queensland and you've ever been to the Thai Orchard Restaurant (at Mt Gravatt or Springwood), these taste the same, they are sooooooooo yummy and great even as a meal with salad thru summer.

They sound good.  and the sauce is so easy, but just what I like for dipping my prawns. Ta.

Would use that for chicken too - maybe Chookies KFC chook?

Yeh great idea Thermomixer.  The restaurant I quoted, well they are well known for their coconut prawns, and to my suprise we went to a friends house and she made them for starters and I was over the moon so had to get the recipe.  If you like things a bit spicier too you could always add a bit of chilli in with the sauce.  They really are so yummy ! Bit of a pain peeling the prawns (but that's DH's job and I do the coating !). Can be made in advance a little too and just fry when ready to serve. Next time we make them, I will post a pic.

MMMM he has, must be something to do with his wonderful wife he he. He had only been here for 5 years before we met.  He's from Dundee. He has no real desire to even return for a holiday, his folks are over there at the moment and return on Tuesday. Probably just as well since it would cost a fortune with 3 children. I went over there for a few holidays in my wilder partying days, and had a great time.  I've lived here since I was 4 (from Lancashire UK).  He still likes some of the food from home though, he wants me to make clootie dumpling.  Have to get a TMX recipe for it.  How long have you been here Thermomixer ?

LOL - I've been here all my life.  But spent 6 months there visiting my grandparents/relatives and fell in love with baps, Arbroath smokies, Kendall Mint, Atholl brose and a wee drop o' the doin's. (If ya ken ?)   ;) 

My mother used to make a fine clooting dumpling.  It's all in flouring the cloth, so she says.

BTW - prawns (without the coating) and mango sauce are in the Melbourne paper this morning. Yum

The prawn recipe sounds nice. I may try it with chicken.
Love the discussion. What is clootie dumpling please? If the cloth has to be floured it sounds nice.

Cookie, Clootie Dumpling is kind of like a Scottish version of Christmas pudding, it's usually made with suet in it and boiled. My mother-in law makes it usually around Christmas so I will ask her for the recipe and let you know (she arrives back from the UK tomorrow actually).  If you do a google search for clootie dumpling you will find some info / photos / recipes.  Funny though I only ever see them eat it in slices cold like it's Christmas cake and sometimes my hubby will warm it up and put a huge, huge dollop of that double thick cream on it. I on the other hand would eat it with custard mmmmm. Now that we have the TMX though, I will give it a try for this Xmas, so I'll let you know when I get the recipe.

Cooke, Well my MIL came over tonight and I asked her for the recipe, and her comment was "I don't use a recipe".  She is however going to write down what she does (hmmmm probably no measurements lol), and once she gives it to me I will do a google search for a recipe with similar ingredients / method etc.  So lucky we have a bit of time b4 Xmas lol. So stay tuned !

Made these with a bit of variation for my Christmas Dinner entree contribution. I got so much praise , it was almost embarrassing cos they were so easy. I added a bit of seasoning and chili powder to the flour before dipping the prawns. And  I didn't have mayo or chutney, so made more of a salsa with my mango adding a bit of red onion, lemon juice and a few coriander leaves. Turned out to be a real hit : Thanks for the recipe. H

I would Judy otherwise it may be too thin. Keep the juice to thin it if you need to.

Hi sorry, I'm just catching up now. Been a bit hectic over Xmas. Judy, I drain most of the juice and set it aside and add a little more back in if I need to. You could of course use fresh mangoes at this time of year too.  Must make this again, It's so yummy.

The price of fresh mangoes has gone sky high here. A result of the floods in Carnarvon. Poor things. Red globe grapes have been affected too.
