Main Dishes / Re: Warm chicken and chorizo pasta
« on: January 11, 2013, 09:39:47 pm »
I made this pasta for dinner last night - my 2 girls LOVED it, so much so that I froze some for them - enough for 2 extra meals for them.  Hubby, sister and I enjoyed it too, we are usually big fans of saucy, tomato pastas so this was something different for us.
this is very versatile, I added sliced zucchini and mushroom to the last few minutes of cooking the chicken and boiled pasta on the stove as I had 2 hungry kids and this reduced the cooking time by 15 mins ;D - I think the pine nuts make this dish (we sprinkled them on top instead of mixing through pasta) so don't skip this addition :)
Thanks!!!

I made this last week and wondered why my sausages/veggies didn't cook..............I discovered that I'd forgot to add water to my veg stock paste!!!!! LOL >:(
Anyway, after hastily throwing the sausage into the frying pan and steaming the veggies (thankfully the potatoes still managed to cook), I added some water to the rather dried up sauce and presto!!!!!! We still managed a yummy dinner.
My husband doesn't give compliments easily and he is still talking about how lovely this meal was ???
Can't wait to make it again - PROPERLY.

Have just popped 10 cupcake size and 36 mini muffins in the oven - kids gave the mixture the thumbs up!!!  I reduced the sugar to 110gms and the choc chips to 180gms as it seemed sweet enough for us all.  Hopefully they'll all enjoy them as it will be great to have these in the freezer for snacks. ;D

Hi ladies, Wow, have been admiring all the lovely piping on the cupcakes you've all created and must admit that I'm a little envious.  I invested in a good piping kit last year and after numerous attempts so pipe  rosettes, I've always come unstuck - I'm sure it's do to with the nozzle but just can't seem to find the correct one - my kit states that a certain nozzle does rosettes but it doesn't look like the ones I've seen on U Tube tutorials.  Maybe it's just me  ;D.  Am going to ice my Pop's 90th birthday cake tonight with this frosting so I'm hoping it all goes well!!!

I've made this cake twice this week - 1 vanilla slab and a chocolate one - used 1 1/2 batches in each and they are now in the freezer ready for my pop's 90th on Sunday. ;D Do you think it will be ok to thaw them on Saturday night and decorate them then????? I thought they should be ok popped straight into the fridge and left overnight.  ???
Thanks in advance  ;D

Wow, it's been ages since I've posted but thought I'd pop on and say that this dish was a huge hit with my family - so easy to make and light enough to serve as a summer curry. I accidentally added the cornflour paste with the rest of the coconut milk and the consistency was lovely.........although.......
I made it the following day to take to a party and doubled the sauce in the TM and then transferred to a pot when adding the chicken. This time I thought I should add the cornflour at the end however the sauce curdled and ended up looking very unappetising. I obviously didn't cook it at a low enough temperature but was curious to know whether this would have happened in the TM (without the cornflour).
If i was serving it to my clan I wouldn't have fretted however serving it to others caused me to think hard...... ??? :-))
TM to the rescue again!!!!! Seived out all the chicken and most of the herbs and blitzed the sauce on 9 for 1 min and PRESTO, lovely smooth sauce.
This is on my list of favourites and I think I might add the cornflour mix with the rest of the coconut milk in future  ;D ;D
Thanks for a lovely recipe!!!!

/just making these now for the girls and I for tea - we have had way too much meat lately!!! :)
I've omitted the herbs and used some of Tenina's garlic paste instead.  I've also used oat flour instead of bread crumbs and a handful of parmesan cheese.  Smelling yum!!!
Will try and post later to let you know the verdict!!!!!

Have made this 3 times now - am about to make it again, love that it's a choc chip bikkie without having to roll them into balls.  Last time I made them with white choc chips and macadamia nuts - YUM.  I've never bothered to make the icing (lazy I guess) but might try this time round. Thanks Chelsea!!! :)

Have just finished preparing this one.......I think it's going to be a winner, followed Chelsea's tweaks and cooked the pasta in with the beef to eliminate having to boil the pasta separately.  Also had some lovely rainbow chard so chopped that up and placed it on top of the beef, then the cheese sauce - YUMMO!!! :)

Michelle, where did you buy your tupperware from overseas.

I would love more, but its so expensive.
Obbie, we have our whole pantry decked out with modular mates too.  We bought ours from a tupperware distributer in Malaysia - about 1/3 of the cost it is to buy it here.  I had troubles with my conscience at first as I like to support Australian businesses but then I got over it and realised how much they are ripping us off!!!!!!    The tupperware is exactly the same, arrives promptly at your door and is CHEAP. If you go on to e bay and google tupperware modular mates - look for tupperware coming from Malaysia and it'll be the one!!!

Jams and Chutneys / Re: Choc Hazelnut spread from the EDC
« on: August 01, 2012, 03:53:09 am »
The verdict on the spread was yummy, the kids like it. I did however make an alteration to it, instead of just grating hazelnuts, I roasted them and peeled them. I put the sugar aside and then put nuts in for grating for 20sec on speed 9. I then put it on speed 6 and waited for it to liquify. I saw this hint on another recipe (not to do with tmx lol), and thought this might make the difference to the texture. There is still a slight graininess, but am happy with the result. Although next time I will try with a condensed milk.
Followed your alterations and YUMMY SMOOTH nutella - thanks!!!  I didn't peel the hazelnuts though and it still turned out smooth.

These choc-chip cookies are possibly the best I've ever made.  They are really simple and tasty incredible.  We cook them for about 14mins and they are SUPER crunchy although they are nice taken out a little earlier for a fudge chewy centre.  A few tweaks.......
I use about 170gms of rapadura sugar and will try less next time.
I use rice-bran oil - about 80gms.
AND......I hate to say this but I reduce the chocolate chips as mine a more like buttons and it just overwhelms the mix - in saying that though, I have just given them a good mix (not on reverse) so that you get a mix of chunks and smaller bits.
Keep a close eye on them as there's it doesn't take long for them to go from cooked to burnt!!!!!
Thanks sooooooo much for this recipe - I don't think I'll try another as you could easily adapt this one and add macadamia's etc.........
These are SUPER YUMMY!!!!
