Title: Sourdough Apple Butter Muffins

140 g sourdough starter
150 g apple butter (http://www.skinnytaste.com/2010/11/slow-cooked-apple-butter.html)
130 g skim milk
1 egg
45 g butter, melted
95 g honey
275 g wholemeal plain flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice
55g chopped walnuts

Preheat oven to 190oC, fan forced and line 12 muffin holes with paper liners. Spray or coat the liners with oil or cake release as I found they stuck to the paper.

Place sourdough starter, apple butter and milk into the TM bowl and mix for 5 sec/speed 4.

Add honey, egg and melted butter.  Mix 10 sec/speed 4.

Add flour, baking powder, salt, cinnamon, allspice and walnuts then mix all ingredients together using a strong spatula.  Do not overmix.

Divide the mixture evenly between the muffin holes and bake 20 - 30 minutes in the centre of the oven.  Mine took 22 minutes but I checked after 20 minutes.

Cool on a wire rack for 5 minutes.

They're nice served warm with both butter and apple butter.

Suitable to freeze.

Yes but I have to stop Katie, some of this food is going back into the freezer and I'm trying to clear it out  :D

I've never made apple butter.Off to have a look at the recipe you used ;)

Thanks for this one; I have seen apple butter on the net and keep meaning to try it and now you have pointed me in the right direction. I need to buy a smaller slow cooker I think for all the good recipes on this site. I love sourdough muffins so these sound good.

Troupie you definitely need a small slow cooker. I cook a small SD loaf in mine every second day.
Judy, this looks good. The Apple Butter must give them a nice flavour. I have been bottling the Apples as they fall.  I might make some of these using just  Apple pulp to see how they go.

You need a medium sized SC for the apple butter, I think this one of mine is a 3.5 litre. I'm sure any type of apple sauce would work Chookie but the apple butter does give the muffin a lovely taste.  It's not a light, fluffy muffin - it's a healthy one though I think. I'd be happy to warm a couple for breakfast.

I wonder how this would turn out as a loaf? I may try it when I get back from Canberra.

Mine is about 6 lt and it is way too large for a loaf of bread for the two of us so 3.5 would probably be a good size; they are often out cheap these days so I will get one. Have to try the apple butter.

We bought a large box of apples back from Orange a week or two ago. Last time I looked my neglected sourdough was still alive so I might wake it and give these a go. Thanks Judy.
