Title: Hygienic Mayonnaise

Ingredients

400g vegetable oil (I use sunflower)
2 eggs
10g vinegar
1 teaspoon salt

Weigh out the oil first into a jug/beaker. Keep aside.
Place eggs, vinegar and salt in  *: Program 1 minute 30 seconds, 80º speed 5.
Then program speed 5 (without temp) and pour oil slowly on to lid with MC in place.
When finished scrape down sides and mix further 10 seconds speed 3.

This recipe is from the offical Thx magazine, but it does state, that although it is lower risk than normal mayo, it is NOT pasteurised.

Thanks Bron, I haven't had much luck with making mayo so will give this recipe a try.

Yes, whole eggs, makes a huge amount of mayo! Great for a potato salad etc, or add some garlic to it to make ali oli! Me and my garlic! ;) ;) ;)

No definitely NOT! I would call it a "safer" mayonnaise! ;)

Ahhh ok ta, I'm looking for low fat mayo recipe that doesn't taste gross like supermarket ones.
