Title: Poached eggs
Post by: Harmony on August 02, 2009, 04:21:40 am
Can someone less sleep deprived than me think of a way to poach eggs in the TMX? I'm not a big egg fan, so I don't cook them much, the kids won't eat them if I fry or scramble them, want to see if I can poach them satisfactorily, figure the TMX would be more consistent than learning to do them on the stove, if it can be done ;)

Maybe in a little pyrex dish in the Varoma?

Couldn`t you put them in gladwrap and then into the basket with water in the bowl. Have you seen the way that some cooks do it with gladwrap? Line a cup with the plastic and put the egg in and then just twist it so that you have a little sack. Haven`t tried it but it sounds like you could do it that way.

Think the blades may just be a problem there.

Sandy is right - I have done it that way a few times - not sure if I have posted a photo.   You can just put plastic wrap across the whole steamer basket and place a few in to cook and about 500ml water and 100 deg.  Depends on what they are to be used for.

An alternative is to place them in the poaching tins/containers that you can buy and then place them in the varoma to steam.

There is a recipe in the Full Steam Ahead for eggs en cocotte (if JD can reproduce it - please)

with enough water and the right speed they wouldn't go near the blades (but you're right the basket is much safer lol)

Thank again JD.

I tried to post some photos of poached eggs here - may need to make a post on my blog.

The first lots were done in plastic wrap in the basket as per Intrepidtrier.

The second lot were done on a piece of silicon paper in the Varoma with moulds like egg rings.

Found a more simple version of steamed eggs in the varoma - have posted it in breakfast section.

Thanks JD - have put a post on the blog:

http://thermomix-er.blogspot.com/2009/07/thermomix-steamed-eggs.html (http://thermomix-er.blogspot.com/2009/07/thermomix-steamed-eggs.html)

I used greased egg rings in the tray.

It is a very simple and useful technique.

Thanks everyone, I did them in gladwrap in the basket, they were cooked (firm) in about 9 mins. She still didn't eat them, but hey, they worked and one day when she's not being so fussy about her food...the other one ate some once they were rejected by no 1, an achievement given how little she's been eating lately and how sick she was last night :)

And no washing up! I HATE scrubbing egg rings ;)

Hey Harmony - how about if you make them into little suns:

Did you just hack at the edges once they were cooked Thermomixer?  They would look nice in those heart shaped 'rings' you did the crumpets in too.  It's amazing how a child will eat food if it is presented in a fun fashion.  My GD will eat her sandwiches at kindy if they are cut out with a princess cutter but not if they are triangles or squares. We just have to outsmart them (if that is possible) ;) ;)

I LIKE your thinking JD - the ones in this post http://www.forumthermomix.com/index.php?topic=1480.msg11590#msg11590 (http://www.forumthermomix.com/index.php?topic=1480.msg11590#msg11590) were in the heart-shaped "rings" but didn't come out so well in the pic - need a dark plate. (Oh well,  off to the shop for another plate  ;D ;D)

With the sun-shaped ones, they sort of fell out like that and I pushed them out further for "effect" - too much time .....

Thanks for the tips :) Presentation will work normally, but the current situation is far beyond normal fussiness that resolves if they're really hungry or they just want something a little different, she's got serious gut issues and is even rejecting her favourite foods at times  :o getting the probiotics into her though, hopefully will be on the mend soon :)

Checked out the photo again Thermomixer - of course they were heart shaped, stupid me didn't notice first time I saw them. As you said, a dark plate would have shown them off better.

I got some of those little silicone poaching cups & stick those in the basket - just need to remember to grease them before putting the eggs in so you can get them out once cooked.

Thanks for reminding me, I have 4 little silicon Avon tart thingies that I could use for eggs. Have got quite a lot of silicon bakeware but have hardly used it.  Must remember to grease them though - don't know if I would have.  Probably would have thought silicon didn't need it.

Decided to try a more traditional poached egg in Thor today - was over visiting Sargo and she was working on english muffins - so got the idea that you could make all but the meat for eggs benedict in the TMX.

I heated water to line II with a couple of tablespoons of vinegar to 100C.  I had the internal basket in place.  With the TMX on  :-: and about speed 2 I added the egg through the top from a cup I had broken it into.  I let it cook for about 4 minutes.

Perfect poached egg.

Cleaning the basket requires a thin knife or stiff brush, but it really took no time at all.

Thanks for that - have to try it.  Guess you dropped the egg in fairly slowly to let it coagulate before dropping through the cracks?

Just kind of slipped it in to the slowly moving water.  Might have been better to have the TMX going  :-: speed 3 to help round up the egg more, but there wasn't too many little egg strands thanks to the vinegar.

Just made poached eggs as a late dinner for myself, I used boiling water out of the kettle to speed things up :)

Insert steaming basket into TMX.
Pour in 700g boiling water.
Line basket with square of non-stick paper about the size of TMX lid.
Crack eggs into basket and cook at 100C speed 2 for 6 min- runny, longer for a more firm yolk.

Sorry I don't have a final photo, I gobbled them up  :D

Great idea with the parchment!

I did try one batch with faster speed - not a good plan - much more shredding!

Someone, maybe JulieO, just posted that they put an egg into the MC while cooking another dish in the TMX. Perfect poached egg!

I had a strong desire at 1.30am last night to poach eggs this morning for breakfast.  Without having visited the forum before my brain started working on a solution I decided to suspend little glad wrap sacks of eggs from the lid of the Varoma and steam them.  I actually got out of bed at 2am to try my theory (not to cook them, just to set it up!).
Worked a treat!
I wouldn't use this method again if I was doing this for just myself and DH  (i.e. 4 eggs) I would just put them in the basket as mentioned previously in this thread, but if I wanted to make poached eggs for a crowd I reckon you could suspend 10-12 eggs across the length of the kitchen twine.  Imagine feeding 6 people semi professional looking poached eggs all at once!

O2K, that bought a smile to my face.  How long did it take you to set that up  ???   Brilliant thinking, thanks for sharing with us.

:D Was actually really quick.  Just a simple figure 8 through the vents with kitchen string, and a little more to tie each egg on.  If feeding a crowd, you could easily do this the night before and stash the lid in the fridge, then all you need do in the morning is up-end it on the varoma bowl and cook - done in 10 minutes!

And yes, I know it's a very weird thing to be doing at 2am!  Even sadder was the fact that I couldn't sleep after doing that wondering if it would work when I cooked them!

I think your idea is brilliant O2K and with being able to set it up the night before would make a very quick breakfast next morning.  DH doesn't eat eggs for breakfast so I will be trying the wrapping in gladwrap method for a light tea one night.  I'm like you, if I go to bed and think about food or have just finished going through a recipe book or 2, I also have trouble turning off.

JD, just remember to spray the inside of the plastic wrap with a bit of oil so the eggs come out easily once they're cooked.  Also, to get them in there in the first place, lay the wrap over a glass and poke it down a bit so there's a hollow for the egg to sit in, then just gather the edges and tie up.  Easy peasy.

As with any egg dish, it always depends on temp of eggs and how 'well done' you like them.  I think you'd be safe with the same time or slightly less than you would do for boiled eggs in water.  Say 7-8 minutes?  The good thing about cooking them in the plastic wrap is that you can lift them up with a slotted spoon and take a look around to see if the white is fully cooked (especially if you leave a bit of a gap at the top when you wrap up your egg).  I can't stand having any runny white, but still like the yolk to be a bit runny.
